Sweet potato fries :)

Tonight I was tired from going back to work, so I wanted to stick with something easy.  The grilled cheese I had the other day was so delicious, I decided to make it again, as well as some sweet potato fries – it was the perfect dinner!  The grilled cheese was American, turkey, and spinach, and the trick to my sweet potato fries is adding a lot of spice – I add a handful of chili powder, a sprinkle of garlic powder, some Montreal steak seasoning, and S&P.  I’ve tried making them with sweet seasonings before, but that just doesn’t do it for me.  I got a free copy of Cuisine at Home in the mail, which I ATTEMPTED to read during dinner, but ended up spending most of my time fending off the world’s worst behaved dog.  Sorry Lando (she’s losing her puppy teeth) – tonight you were HORRIBLE! :(

And I snacked on two devil’s food cookies while I was waiting for the fries :)

Veggie lunch

I didn’t really feel like anything heavy for lunch, and since I was actually at home, I decided to fore-go my usually lunch salad and try something new.  I had this veggie bowl in the freezer for about a month, and I figured I would give it a shot:

Unfortunately – this bowl was pretty disappointing.  Everything was bland and flavorless and “squishy”.  I can usually handle frozen veggies being “squishy” – but these were just too boring for my liking.  I ate 1/4 to 1/2 and then threw the rest away.  I was still hungry so I had some egg whites, broccoli and dip, and an apple (with PB – PB not pictured) :)

When I got to work, I had plenty to keep me busy, so I wasn’t even hungry until about 3:30.  I had one of my favorite snacks – a blueberry yogurt Luna Bar (smores and strawberry yogurt are my other favs), and of course a diet coke to wash it down :)

Question for you – What is the one thing you can’t help but sample the whole time you are cooking/baking?

For me – it’s hard boiled eggs!  I made these this morning, and ate 3 eggs whites before they made it in the fridge.  Baking cookies – no problem – I could pass those up a million times.  Egg whites – I cave ever time :P



Blah Tuesday

I woke up to a very gray, rainy day – feeling pretty tired :(   I felt sick to my stomach when I first woke up, so I started the day with some green tea, and two containers of jello.

Finally around 10 I felt like my stomach was okay for some real food, so I made an egg sandwich, which was exactly what I needed!

I need to share with you the snack I made while trying to stay awake for Boston Legal last night!  I found this “popcorn” flavoring the other day at the grocery store.  It has two calories in a serving (I think a serving is 1/4 1TSP).  So I thought I should try it out on a pack of 100 calorie popcorn.  If you like Ranch, you WILL LOVE THIS STUFF!

And surprisingly – the ingredient list isn’t too scary.  I could pronounce almost everything, with the exception of the last two ingredients – which are listed as “added to prevent caking” – whatever that means! :P    Either way, a used a little fake butter spray (I know that stuff is horrible for you, but it’s zero calories!), and then some of the ranch seasoning, and had a delicious, 104 calorie snack :)

Now it’s off to get organized and cleaned up on this rainy yucky day – I’m heading in to work for a half day – I can’t take this staying at home business – I drive myself crazy!
