Drizzle Run

Happy Thursday everyone!

It’s been one of those “long” short weeks…you know what I mean?  You would think because my work week was Wednesday to Friday this week – it would be smooth sailing – but people like to keep me on my toes! 

To burn off some steam – I started the morning with a run with Lando.  We just did a quick mile and a half, but it was perfect.  It wasn’t too cold out, and there was a very light mist/drizzle which felt really refreshing and invigorating!  Despite the fact that I was up and out the door earlier than usual – I forgot my oatmeal!  :(   Luckily, one of the girls I work with was nice enough to share an extra packet of her’s with me!  I’d never had this kind before:

It was pretty good – it definitely tasted more “oatey” – is that a word?  :P   It had bigger chunks than usual, but I liked it!  I mixed in some pumpkin for added delicious-ness!  :D

Also – an update on last night since I didn’t post dinner – I had some “bowling alley” food a-la-Allison!  :)   I brought some carrots, a z-bar and a diet coke!

The fries they have their look so good – but I used some self control after all my splurges on “vacation”.

EDITED TO ADD:

When I got home, I decided to finally try and make the tofu I had sitting in the fridge.  I used Caitlin’s directions on how to cook it, and made up my own spices.  I like spicy, savory flavors more than anything sweet, so I used a combination of these spices:

  • chili powder
  • paprika
  • red pepper flakes
  • garlic powder
  • onion powder
  • onion salt
  • salt & pepper

It worked out pretty well!   The only thing I would change, is that I would cut the pieces smaller, and bake them for longer, on a higher heat.  I like stuff pretty crispy!  Here’s my plate (not the most photogenic – I know):

I’m going to keep lunch going on here, rather than starting another post.  For lunch I had the take 2 of the salad from yesterday.  Today, since I have a minute, I’ll tell you what I put in there!

  • spinach and iceberg
  • turkey
  • tomato
  • red onion
  • orange, green, and red bell pepper
  • and I stole some banana peppers from the caf line

I have a Z-Bar waiting for me in my desk, as well as an apple.

Can’t wait for the Office tonight! :D

That oatmeal sure does taste more oaty! I like it every once in awhile!

YES, YES, YES!!! This week is short(er) for me too (no classes tomorrow!), but it’s dragging!!

Yeah to get the tofu crispy you really have to leave it in there for awhile. Also, if you spray the dish or whatever you bake it in, with a little olive oil spray that will help! Looks yummy though. :)
