So I didn’t want to give up on the tofu I made last night – so I went at it again for dinner!
I threw it back in the oven, this time on 400, for about 20 minutes. It came out WAY crispier – perfectly crispy for my liking! I have seen Kath eat tofu sandwiches before, so I figured that was the best way to go for a quick, filling dinner. I also nuked a sweet potato!

I topped the sweet potato off with some ketchup, and roomie Josh was nice enough to share his awesome BBQ sauce with me for the sandwich. After taking the dog for a walk, Mike decided we should have an adult beverage (or five) while watching Thursday night TV, so I ran to the store and got my favorite bottle of Savingnon Blanc – here’s glass one, with a little Lando on the side.
I also have some exciting news! I officially signed Mike and myself up for the Thanksgiving Day Turkey Dash! It’s only a 5k – but it’s the first race I’ve done since July – and the first I’ve signed up for since I wasn’t able to do the half marathon because of my stupid gall bladder. So I’m really excited! My brothers and my aunt and uncle are running it as well! WOOHOO!

I love Tofu sandwiches! You should also try it in a wrap with spinach!
