Holy Snack Attack

Hey ya’ll!

Sorry for the absence!  The first day we work of the month is always insane!  So I have quite a bit to share with you!  First – I’ll start off with food from yesterday – then get to the good part!  Quick recap, here we go:

Berry oatmeal:

I got “snacky” at around and had some dry roasted edamame:

For lunch – a spinach salad, and some pretzels with a french onion laughing cow – I broke into them before the picture! :)

For another snack – I tried my first Apple Cinnamon Z-bar around 4 – it had a green wrapper – how could I NOT LIKE IT?! :)   It was quite tasty – reminded me of apple fig newtons!

For dinner, I jumped on the squash bandwagon!  I’ve had a butternut squash laying around for a few weeks, and I’ve been waiting for the perfect recipe.  Here’s what I did:

  • Nuked the squash in the microwave for about 4 minutes so it was easy to cut
  • Cut it open, and scooped out the guts, then cooked in the oven for about 35 minutes (on 375/400) – I rubbed a little EVOO and S&P on flesh

Here’s what came out:

Then – while that was cooking – I decided to throw together some vegetarian chili!  I never measure a single thing when I make chili – so I’ll just tell you what I put in it! :)

  • 1 can of sweet corn
  • 1 can of dark red kidney beans
  • 1 can of pinto beans
  • 1 can of diced tomatoes with chiles
  • 1 can of tomato paste (a small one)
  • some chicken broth
  • season as you like – I used – a whole lotta chili powder, cayenne powder, garlic powder, onion salt, and paprika

This was sooooo good!  I ended up adding a little bit of ketchup and hot sauce to the squash that was left after I’d eaten all the chili!  I’m eating the leftovers for lunch today – I’m so excited! :)

While dinner was delicious, and I was really happy with how it turned out – I was SOOOO “snacky” all night long!

First – I went in for some organic dried pineapple – this was REALLY good.  First time I’d had it, and I will definitely buy it again next time I’m at Whole Foods!

Wait!  Snack time is no where near over!

Next – 100 calorie pack of popcorn with spray butter and “Popcorn Ranch Salt” – YUM! :D

Wait – still not over (I know – ridiculous right?!) :P

Next – Mitchell’s Ice Cream – they have the BEST frozen yogurt.  I got a single scoop of the Peanut Butter Reese’s Yogurt - SOOOOO GOOD!

This morning, Kristin and I got up early and took a walk outside (with Lando of course) to enjoy one of the last nice mornings of the season.  Breakfast this morning – SUPER LAME!  Low Sugar Maple Syrup Oatmeal – with a few raisins and a sprinkle of granola:

haha your pictures of Lando get me everytime!! Him and Abbie need to have a play date in the future!

Don’t be scared of eggplant!! Its really easy :) I promise! And if you like cooked zuchinni or yellow sqush then you will like eggplant. Once its cooked it has very similar texture to them

wow everything looks so good!! especially that stuffed squash :D such sunny colours. of course, that ice cream too – mmmmm.
