Give me two slices of bread…

…and I’ll make a meal out of it.   Or at least that should have been my eating motto yesterday!   :cool:

I had a breakfast sandwich (that’s 2 slices of bread) – and then kept that theme going through lunch and dinner.

For lunch – I packed a veggie salad.  We were out of lettuce, so my salad just consist of huge chunks of all the veggies I have left.picture-030

The veggies were great and filling, but I was still craving something substantial so I made a quick chicken sandwichpicture-031

Dinner was more of the same!  I didn’t make my weekly grocery store trip because we have only $25 dollars  left for the challenge, and that needs to include everything I buy to take to my mom’s.   So a quick, easy boca burger with a sweet potato it was!picture-0261

I went and ordered new glasses last night – after almost 10 years!   I’ve been wearing the same pair since HIGH SCHOOL!   But, it’s not like I actually wear them out – I wear contacts all day, and then wear my glasses from the bathroom to the bedroom, and that’s it.  I’ve been dying to get a new pair, and finally took the plunge last night!   Once they come in, I’ll model them for you!  :razz:

Breakfast this morning, I needed to use up more of our pantry items, so I continued with the apple pie oatmeal, topped off with some granola:picture-0271

And that does it!  This week is short to begin with, but it’s FLYING BY!   Sorry if I haven’t been leaving you all as many comments lately – I promise I’m still reading!



Thankgiving Weekend – 1st time around

I’m back!  :mrgreen:

And I’m sure you will all be glad to know – that Lando is back to her spastic, psychotic self!  When I came home on Friday she was running around, jumping, basically – doing all of the things the vet said she shouldn’t.  I even had to put the collar on her at a few points because she kept going for her stitches.  Look at how funny she looks:picture-0112

Saturday morning I was INSANELY productive.  We ended up getting up at 5:30am since Mike had to take his Dad to the airport.  Since I was already awake, I decided I might as well take care of some stuff around the house!   So by 7am, I had already done 2 loads of laundry, cleaned our room, washed all our dishes, organized some piles, and drank way too much coffee!

Since I actually get to eat breakfast at home on the weekends (instead of preparing oatmeal at work) – I usually stray away from oatmeal, and eat more of an egg based breakfast.   Saturday was no exception!  I made a delicious egg/cheese/chicken breakfast sandwich!picture-0132

Around 9 I headed up to the gym to get a workout in, then came home and got ready for my friend’s baby shower.  I was really excited for the shower, because she is my first friend to be having a baby!  :)   They know they are having a boy, and they are huge Yankees fans so they had a baseball themed shower.   Look at how cute the centerpieces were:picture-0144Not to mention, the cookies were AMAZING, they were almond flavored – YUM!

All the rest of the food was amazing as well!  This is my first plate, but I DEFINITELY went back up for seconds!picture-0152I had a turkey sandwich, pasta salad, veggie pizza, pumpernickel bread with spinach dip, and veggies & dip.

After the shower, I headed home to pack, and then we hit to road to go to Mike’s parents for an early Thanksgiving celebration.  Once we got there we just relaxed, had some adult beverages (okay – SEVERAL adult beverages!), and my mother-in-law brought out a delicious spread of munchies:picture-021

I kept going for the cheese and crackers.   The white cheese was amazing – it was a creamy horseradish – I’ve never had any other cheese like it!   And it was just the right amount of spicy – not the “make you cringe and your nose hurt” sort of horseradish flavor.

I ended up passing out well before everyone, my 5:30am wake up call ended up catching up with me.  :(

For breakfast, we ate cereal because they actually keep milk in there house!  (I’m really really bad about keeping milk in our house)picture-026

My sister-in-law had requested a special main dish for our holiday – chicken paprikash!   OMG was it PHENOMENAL!   I could hardly wait to dig in – hence why the chicken is already cut in the picture, I went right in to chow down without even thinking about the picture!picture-029Here’s my contribution to our meal – a colorful salad (c’mon – WHAT DID YOU EXPECT FROM ME?)picture-027And here’s the whole spread – all washed down with tasty Savignon Blancpicture-051

Here’s my view on the car ride home:picture-0541Nosey Rosey Lando had to take in all the sights, god forbid she actually lay down on the card ride home!   :razz:

Once we got home, I had a hankering (LOL – I hate that saying but I just HAD to put that here) for some Great Lakes Christmas Ale.  Actually, I really can’t say I had a hankering, because I’ve never tried it before.  So I had a really strong urge to try it!  So I convinced roomie Josh to drink with me!picture-0581

THIS STUFF IS FANTASTIC!   Now I see why everyone makes such a big deal about it!  Although – I didn’t think it was as great this morning when I woke up tired and with a headache.

I decided to make breakfast at home, so I made a repeat of Saturday’s breakfast – a yummy egg/cheese/chicken breakfast sammypicture-0611

And that’s about it!  It was a crazy busy weekend, but I had a fantastic time!  Now I just need to get through the 3 day work week – and then IT’S THANKSGIVING!   Good lord, where did November go?!  I can’t believe it’s already Thanksgiving week!   Have a great one!

Thanksgiving a few days earlier!

Hey gang!  Just wanted to let you know we are heading out of town to my in-laws to celebrate Thankgiving (albeit a little early) with them!   So you won’t hear from me tonight, and possibly maybe not tomorrow, but I’ll have another mother of a post when we are back!
