Grapefruit surgery

Happy Thursday ya’ll!   Office is on tonight, and I don’t think my day could get any better!  :)

I have to start out with a very big thank you to Meghann!  She helped me get my snazzy new photo widget up on my page!  It’s sad – I work for an internet company, and yet…when it comes to web-based applications – I’m not the least bit tech savvy.  So a HUGE HUGE thank you goes to Meghann!   :)

Yesterday started off with more delicious, fantastic, spicy oatmeal:

Thank GOD I make this at work, because we are out of Frank’s hot sauce at our house (I don’t know how it came to this!) – I MUST go to the store and get more ASAP!

For my “OHHH so reasonable“ mid-morning snack – a delicious sugar cookie brought in by my old boss:

picture-004

This thing was fabulous, although it did have too much frosting for my liking, I ended up scraping most of it off!

To spice things up so ya’ll weren’t bored – I switched away from chickpeas on the salad for humpday, and went with black beans:

I even added cheese to today’s salad -  Aren’t I fancy? :)

I also had a grapefruit, for dessert, which I promised Andrea, over at Bella Eats, that I would show how I eat them.  Ya start with the whole grapefruit:

Peel the sucker:

Then pull it apart (squirting as much as possible!)

picture-015

See how the the flesh on the left side is exposed?  And the yucky white skin-y parts are pulled off?  Well that’s what I go through and do for each piece – so that you’re left with:

picture-017

…is a nice clean, “yucky white stuff free” piece of grapefruit!   Here’s the mess that’s left after my “procedure”

picture-018

I’m not sure if you can see all the “squirt marks” – but it’s a mess.  And I know there are other ways you can eat a grapefruit, but here’s why I don’t like them:

1 – Cut it in half and eat the little pieces out of it, as if the grapefruit were a bowl – I feel like that’s wasteful – and takes just as much time. – VETO!

2 – Just deal with the white stuff and eat it like an orange – YUCK YUCK AND MORE YUCK – VETO!

Therefore (OBVIOUSLY) – my way is the best!

See how nice and delicious the very clean grapefruit looks?

Hey – come on, if you guys don’t know by now that I’m totally kooky – I don’t know what blog you are reading!

For a snack, I grabbed a blueberry z-bar on the way to a meeting (no pic), and then had an apple with PB and an orange:

Oranges I can handle the skin (again – I know I’m a nutbag – I make no apologies!)

For dinner, I decided to finally make the HUMUNG-O spaghetti squash I had sitting in my cupboard, as well as some turkey chili to go on top of it!  Here’s what I did for the chili:

  • Brown a package of turkey meat (half way through – throw in some onions if you feel so inclined)
  • After meat is browned, drain any liquid
  • In meat pot – add whatever veggies you like, in my case:  black beans, kidney beans, red and yellow peppers, can of diced tomatoes, and banana peppers
  • Add in 1 small can of tomato paste
  • Add in as much chicken broth (water if you are in a pinch) as you feel necessary – if you like soupy chili – add a bunch;  if you like thick chili – add it in slowly in tiny amounts, stirring every time to see if you need more
  • Add seasoning – I added (not measured): chili powder, garlic powder, onion powder, paprika, and cumin (NO FRANK’S – WE WERE  OUT!)
  • Bring that to a boil, and let simmer for 20 minutes

Here’s the finished product:

And then mine, which I of course added chickpeas to:

There’s a bed of spaghetti squash underneath that you can’t see!  It was “okay” – I swear – the fact that the Frank’s Hot Sauce was missing made all the difference in the world!

Mike and I both (coincidentally), had a really bad sweet tooth craving last night, so we went up to Dairy Queen.  When I got home, I added pom seeds to my fudge sundae to pretty it up – but my camera died (just the battery, no worries, it will live again) – so I have this yucky picture from the camera on my phone:

That’s about it kiddos!  Then I caught up on watching Scrubs (since I had to miss it for volleyball Tuesday), and went to bed.   Have a great day!  :)

What a lengthy surgery for that grapefruit! Your chili looks so good! Your dessert too, of course!

OUT OF HOT SAUCE?! That just does not compute!

Haha – I love your grape fruit “how-to.” That chili looks fantastic, plus the banana peppers in it?! YUM!

Love the new picture!!

I forgot about your spicy oatmeal – I’ve always wanted to try that!! I’m going to have to pick up the necessary supplies at the store this weekend :)

Ok, so I was going to comment on each individual food item but that might get a little WACKY. Let me just say that I seriously love all of your eats and I’m pretty sure that you’ve made me hungry again! ;)

I would have scraped all the frosting off. :D

I am a mess when it comes to citrus. I cannot peel them to save my life. :)

I wish I liked grapefruit, it’s so good for you. About once every year I try it again hoping my taste buds have changed their minds, but they never do!
