Take Two: Tofu!

Three posts in one day?  Well that has happened in MONTHS!  :grin:

Breakfast was spicy oats (shocking, you had no idea that was coming, huh?!)  :wink: picture-0373I had a pretty busy morning – so no snacks – just right on to lunch:picture-0034It was the bottom of the barrel for most of my veggies – and my tomato was mealy!  :evil:

I had brought some hummus for a snack, but my friend had brought in my “cake mix with a can of pop” – so I just had to help myself to one of these pretty little cupcakes!picture-0056And right before the end of the day, I had an apple and orange, because I was planning on heading to the gym right after work.picture-008My scheduled run was only 2 miles – so I had my mind set on trying to pound those out as quickly as possible.  I’ve been getting faster, but my time evens out on my longer runs because I start off strong, and then slow down the longer I go.  I’m happy with a 10 minute mile (that’s pretty fast for me) – so I set my goal for my 2 miles tonight at anything under 20 minutes.  Funny things happen when you put your mind to it!  :wink:

To make things even better, when I came home – there was  A PACKAGE SITTING ON THE KITCHEN TABLE! The lovely Miss Ashley at Daily Goods wanted to do an exchange – and I got my presents today!   Just from reading Ashley’s blog, I know she is a very sweet and caring person, but now I have physical evidence that she is a wonderful, caring, generous, and sweet person!  Look at what she sent!picture-0182

  • Arnold Sandwich Thins (which started the whole thing!  I can’t find them, and Ashley was kind enough to come up with the exchange idea)
  • THE HOLIDAY CLIF BARS I HAVE BEEN ABSOLUTELY CRAVING!

  • and a beautiful heart shaped stone that says Strength

Seriously??  How freaking wonderful and thoughtful is my package?!?  Ashley – thank you so much, all the thought you put into the exchange was so sweet and just absolutely made my day!

After my experience with Gliding Calm tofu on Friday – I was determined to make it work.  It smelled so AMAZINGLY DELICIOUS on Friday, and it broke my heart to have to throw it out because I burned it.

So I got out my block of tofu, and all the ingredients – and took another stab at it – this time, standing watch over the oven to make sure I did not burn it.  The result?picture-0284TOFU PERFECTION!

On the side, I had an apple, and set it all up on the plate in Miss Gliding Calm fashion – my tribute to the genius who came up with this delicious tofu rub!  :grin:

I love my Monday night TV – gotta go kiddos!

…I don’t like Mondays…

I love that song!  It’s been on all the House commercials since they changed dates, and now it’s TOTALLY stuck in my head.

Alright – now on to the recap of the weekend!

After my Saturday morning post – I headed to the gym to run my scheduled 5 miles!   Now – on my 4 mile run Thursday, I started off strong, and then got SUPER sick to my stomach after 1.5 miles (I think I didn’t give my dinner enough time to digest).  So I gave myself plenty of time after breakfast on Saturday – and went into the gym with high hopes! :)

I paced myself pretty well – and ended up running my 5 miles in 53:26, so an average of 10.5 minute miles – not too shabby.  When I got home, I was shaky I was so hungry, so I made myself a chickpea wrap, a Lean Cuisine, and an apple because I needed to chow down and meet my parents at Home Depot.  If I had more time, I would have skipped the Lean Cuisine and made something less processed.   But those are the trade-offs you have to make!picture-010picture-0124When I got home from Home Depot – I noticed a Foodbuzz package on our table – which is ALWAYS cause for excitement!   I tore right into it and found:picture-0142A new sample from the Foodbuzz Tastemakers programIt was 6 bars of Quakers new product line – True Delights! I should have taken a picture of all 6 bars together, but honestly – I was WAY too excited to tear into this bar – the thought didn’t even cross my mind!!  :razz: picture-0181The Dark Chocolate Raspberry Almond was TO. DIE. FOR! There were big chunks of chocolate, and dried raspberry, and almonds – it was positively SCRUMPTIOUS!  And the whole bar is only 140 calories!  You really can’t beat that!  :grin:

For dinner – I made another TJ’s pizza…sorry I’ve been making so many of these lately – but they are SOOO EASY, and one of Mike’s favorites – so it’s always a WIN/WIN!picture-0226The two pieces missing are what I ate!  :wink:

Sunday morning I had a nice big bowl of Puffins for breakfast – these suckers always hit the spot – you just can’t go wrong with them! :mrgreen: picture-0262And then headed over to my grandparents because my Grandpma was getting released from the hospital and coming home!!!  What was just supposed to be a quick visit, ended up turning into most of the day!   Grandpa was kind enough to shell out money and send me and my mom to TJ’s to pick up food for everyone – how cool is that?!?!  We picked up a huge container of fresh salsa. chips, sandwiches, sushi, and some frozen pizzas.   My spread consisted of 3 pieces of sushi, chips, and 1/2 of a turkey&swiss wrap:picture-0301picture-033I ate a hell of a lot more chips (AND SALSA!) than pictured here – don’t worry!  :razz:

I wasn’t even hungry until about 8pm last night – and I wasn’t in the mood for anything at our house – so I just picked some random crap out of our freezer, and went with it (sounds so exciting, right?)picture-036

A Boca burger, and 5 chicken pot stickers – woot woot!   :razz:

Did anyone watch Desperate Housewives last night?  I stopped watching it a few seasons ago – it just wasn’t holding my interst, but I happend to catch it last night while I was hanging on my couch, going through my Google Reader.  It brought me to tears!  By the end of the episode I had tears rolling down my face!!!  Anyone else?  Or am I alone??

I never did get around to painting our upstairs this weekend – although I bought the primer, and washed the walls, so I guess I took a few steps in the right direction! :)

Stuck in a rut!

Hi kiddos!

Sorry no post since Saturday – things have been crazy busy!  I’ll catch up up in a longer post tonight!

In the meantime – I’ve added a “Running” tab to the site, and updated the “Recipes” tab – check them out! :)
