Take Two: Tofu!

Three posts in one day?  Well that has happened in MONTHS!

Breakfast was spicy oats (shocking, you had no idea that was coming, huh?!)

I had a pretty busy morning – so no snacks – just right on to lunch:

It was the bottom of the barrel for most of my veggies – and my tomato was mealy!

I had brought some hummus for a snack, but my friend had brought in my “cake mix with a can of pop” – so I just had to help myself to one of these pretty little cupcakes!

And right before the end of the day, I had an apple and orange, because I was planning on heading to the gym right after work.

My scheduled run was only 2 miles – so I had my mind set on trying to pound those out as quickly as possible.  I’ve been getting faster, but my time evens out on my longer runs because I start off strong, and then slow down the longer I go.  I’m happy with a 10 minute mile (that’s pretty fast for me) – so I set my goal for my 2 miles tonight at anything under 20 minutes.  Funny things happen when you put your mind to it!

2 miles – 19:24

WOOHOO!

To make things even better, when I came home – there was  A PACKAGE SITTING ON THE KITCHEN TABLE! The lovely Miss Ashley at Daily Goods wanted to do an exchange – and I got my presents today!   Just from reading Ashley’s blog, I know she is a very sweet and caring person, but now I have physical evidence that she is a wonderful, caring, generous, and sweet person!  Look at what she sent!

  • A beautiful card (which was GREEN!)
  • Arnold Sandwich Thins (which started the whole thing!  I can’t find them, and Ashley was kind enough to come up with the exchange idea)
  • THE HOLIDAY CLIF BARS I HAVE BEEN ABSOLUTELY CRAVING!
  • a GREEN keychain with my initial
  • and a beautiful heart shaped stone that says Strength

Seriously??  How freaking wonderful and thoughtful is my package?!?  Ashley – thank you so much, all the thought you put into the exchange was so sweet and just absolutely made my day!

After my experience with Gliding Calm tofu on Friday – I was determined to make it work.  It smelled so AMAZINGLY DELICIOUS on Friday, and it broke my heart to have to throw it out because I burned it.

So I got out my block of tofu, and all the ingredients – and took another stab at it – this time, standing watch over the oven to make sure I did not burn it.  The result?

TOFU PERFECTION!

On the side, I had an apple, and set it all up on the plate in Miss Gliding Calm fashion – my tribute to the genius who came up with this delicious tofu rub!

I love my Monday night TV – gotta go kiddos!

Hey Allison! I found those sandwich things a few weeks ago and I LOVE them! They sell them at Giant Eagle on the top shelf of the bread section (down by the english muffins). Let me know if you have trouble finding them!

LOL – I LOOOOVED your comment on my pet page. OMG it’s so true! She is just hilarious….we are always laughing at her because she has such a personality and the things she does just make us laugh ALL the time! I like puggles too!!!! Chad said the only dogs he will ever own are pugs or boxers….I loved boxers so that’s how we ended up with Baylee and it was such a great decision! But yeah, puggles look just like mini boxers :)
