A Celebration of Food

Is that the old jingle for Red Lobster?  Or is it Chi-Chis?  I think it is (or at least I’ve been singing it in my head like it is)  :)

Happy Friday kiddos!   Excited for the weekend?

I am, but starting tomorrow at about 6am – I’m going to be going NON-STOP until next Friday.  That’s fantastic (lots of awesome things planned), and bad (so flippin busy) at the same time!  Wish me luck!  :shock:

Snacks yesterday included….one of these suckers:picture-0013So good – it’s only 40 calories – and tastes like an sticky Fruit Roll-Up (I know – how is that possible??  It is!)  and some pretzels for a salty finish:picture-0072For lunch – a salad, which doesn’t look so good, but I assure you – it was!picture-0022With a side of the left over tempeh from last night!picture-0052These were just as good reheated – although the picture does look kinda grody (made up word?  I don’t know?  Pronounced: Grow-D)

Mike’s on Spring Break this week – so he had plenty of time to think about what was for dinner.  The verdict?  Red Lobster!  I was happy with that – because it meant I didn’t need to cook!  :grin:

We started off with some Lobster Nachos:picture-0085I honestly could have LICKED THIS PLATE CLEAN it was so delicious, but I tried to control myself and had about 10 chips or so.

Since this IS Mike’s Spring Break – I figured adult beverages were only appropriate – so we ordered a bottle of wine!picture-0093Just a simple Chardonnay, but a very tasty addition to any Thursday evening.

I always forget how much food you get at Red Lobster.   By the time I was finished with the salad, I was stuffed!picture-0102But that didn’t stop my entree from coming!   I ordered the half salmon dish – and ended up only eating a tiny bit of the fish, and the broccoli – everything else went in a to-go-box!picture-0114We headed home to watch the Office (IF YOU HAVEN’T WATCHED THE OFFICE YET – SKIP THIS PARAGRAPH) – but holy crap!  Can you even believe Michael quit?  Next week is going to be good, I ‘m EXTREMELY interested to see where this goes!

Do to my left overs from dinner – I had the most impressive lunch for salad that I’ve had in a very long time! Check me out:picture-0134Aren’t I fancy?  :razz:

On top of being fancy – I’m adventureous too!  :razz: picture-0173I ATE A KIWI WITH THE SKIN ON! And it wasn’t terrible!   I was actually pleasantly surprised!

  • finish work
  • dinner then 6 mile run (since I don’t feel like waking up at 4am tomorrow morning to do my long run)
  • sleep
  • up, out the door early (with Lando!) to go to beautiful Macungie, PA to visit our friends
  • party, visit, drink too much, sleep
  • drive back to C-town Sunday
  • run around in the remainder of the day I have left on Sunday, in a panic trying to get ready for crazy week at work
  • Monday – Friday:  work meetings, work gatherings, work meals, work parties, work presentations, work work, etc.   (Basically sleep is the only task I’ll be doing with out “work” in the title next week)  :razz:

Suck it Winter!

I don’t know what it is about the phrase “Suck it” – but it cracks me up every time.  I always say it with a certain intonation too – I think I maybe got it stuck in my head the first time I heard that Eminem song that says “Suck it Marshall” – or maybe I stole it from a TV show – who knows!  :razz:

Today is the last day of winter, and I can’t say I’m too terribly sorry to see it go!  I can’t wait for spring time and warmer weather, and being OUTDOORS again!

Also – I have to say – I was really glad to hear alot of my favorite lady bloggers have the same hang up  I do about sleeping alone!  It’s always nice to hear you aren’t alone in your weird hang-ups! :grin:

I tend to eat the same thing, day after day (as you may recall…), but I feel like I really switched things up yesterday!  Snack:picture-0113I’m not sure if I’ve talked about this combo before to ya’ll – but let me tell you – it’s FANTASTIC!  The Dannon Light & Fit “Cherry Vanilla” mixed with some TJ’s 3 Berry Granola – tastes like a seriously decadent dessert – I PROMISE!

For lunch I did pack a salad, but then I ended up running home to let the dog out, and remembered I had my left over tofu and broccoli in the fridge, and I just couldn’t resist!picture-0123Just as good, even as leftovers!

Afternoon snack was pretty similar to the morning snack, just this time I threw in an apple and some BnPB!picture-0142Question here!  Being the detail oriented person I am…I totally overlooked the fact that the BnPB jar says REFRIGERATE AFTER OPENING – and so it’s been sitting in my cupboard every since. It doesn’t really taste any different to me….is it bad that I still plan on eating it?  And should I be putting it in the fridge now after it’s been out for a few weeks?   Are these questions idiotic??  I think I’m pretty knowledgeable about food, but remember – I didn’t know EVOO could go bad!

Yesterday was the first day in a while, where I felt like I could head home from work, and I didn’t have anything else to do!   So I decided to make some tempeh that I had hanging in the fridge:picture-0152Inspired by Miss GC, I decided to try a bite of it raw…and I was surprised.  It wasn’t bad (I always psych myself up to expect the worst).  I could see myself eating this raw, but tofu – NO WAY.  And I’ve tried tofu raw – I just can’t do it – grosses me out big time!   Speaking of Miss GC – I used her famous rub on this – and it turned out perfectly!picture-0231I had some edamame and grapes on the side too!  I was very satisfied with the way dinner turned out!

But that’s not to say I wasn’t hungry when I was finished! :twisted:

I had one of  those bottomless pit nights – so after “dinner” – I went straight for the PB Puffins:picture-0252That’s just bowl 1 (bowl 2 isn’t pictured!)  I also scarfed down some 100 calorie popcorn, which I also neglected to take a picture of!

Big shocker….picture-0272Steel cut spicy oats this morning.  I’m seriously obsessed.  I think Steel Cut oats may be up there with edamame – in the “HOW DID I NOT KNOW THIS FOOD EXISTED FOR 26 YEARS OF MY LIFE?!?!?!?” category.

I can’t wait for Thursday night TV (please tell me my shows are on tonight – RIGHT?!) – and then I’m headed in for a crazy weekend and week!  This weekend we are headed to PA, and next week at work is our huge annual sales meeting – so if I go MIA as of tomorrow afternoon – just know I’ll resurface (HOPEFULLY!) – sometime next Friday!   Happy Thursday!



Back on Track

For the first time in about 3 weeks – I’ve run ever single day I’ve been scheduled to according to my training plan!   Woohoo!  Granted – I’ve been about as fast as a tank – but it still feels good to be back on track!  :grin:

Lunch yesterday wasn’t at festive (in a traditional sense) as I’d like – but it sure was green!picture-0164Spinach salad and an apple with some BnPB (not pictured).  If I could – I would eat a reuben for ever single meal on St. Patty’s Day! I found this dressing at the grocery store this weekend and decided to test it out…picture-0172It was really good!  You can totally taste the romano – and it’s nice and garlicky!  I would HIGHLY recommend it!

Snack – kept with the GREEN of the day – GRAPES!picture-0181After work – I hit the gym (although I really wanted to be hitting up the bars), and did a painful 4.5 miles – it’s amazing how much a week off sets you back when you were slow to begin with!

Then I headed over to my parents (Mike was out of town, and I have the maturity of a 4 year old when it comes to sleeping in our house alone) – and I made some MORE green food!  Roasted broccoli:picture-0021and some Gliding Calm tofu!picture-0065I got both my mom and brother to try it (neither were huge fans – but they didn’t hate it either) – so I consider that a victory in my book!  :wink:

picture-0042I guess maybe it’s a good thing we don’t have a dishwasher at home – I’d constantly be pulling her out of it!!!

My dad and brother got festive for the evening (I had to pass) – but they made some Black & Tans – don’t they look pretty?!picture-0084I don’t know what it was – but Lando was having NONE of this “sleeping at my parents” business.  She was up all night, whining to go play (apparently she didn’t understand that EVERYONE ELSE WAS SLEEPING AT 3AM) – so I finally got up with are 5:45 and headed home.  I figured since I was up already – I may as well knock out the 2 miles I had planned for today – and I’m really glad I did!  After my run – I started the day with…picture-0101DUH…Spicy Oats!  :mrgreen:
