Suck it Winter!

I don’t know what it is about the phrase “Suck it” – but it cracks me up every time.  I always say it with a certain intonation too – I think I maybe got it stuck in my head the first time I heard that Eminem song that says “Suck it Marshall” – or maybe I stole it from a TV show – who knows!

Today is the last day of winter, and I can’t say I’m too terribly sorry to see it go!  I can’t wait for spring time and warmer weather, and being OUTDOORS again!

Also – I have to say – I was really glad to hear alot of my favorite lady bloggers have the same hang up  I do about sleeping alone!  It’s always nice to hear you aren’t alone in your weird hang-ups!

I tend to eat the same thing, day after day (as you may recall…), but I feel like I really switched things up yesterday!  Snack:

I’m not sure if I’ve talked about this combo before to ya’ll – but let me tell you – it’s FANTASTIC!  The Dannon Light & Fit “Cherry Vanilla” mixed with some TJ’s 3 Berry Granola – tastes like a seriously decadent dessert – I PROMISE!

For lunch I did pack a salad, but then I ended up running home to let the dog out, and remembered I had my left over tofu and broccoli in the fridge, and I just couldn’t resist!

Just as good, even as leftovers!

Afternoon snack was pretty similar to the morning snack, just this time I threw in an apple and some BnPB!

Question here!  Being the detail oriented person I am…I totally overlooked the fact that the BnPB jar says REFRIGERATE AFTER OPENING – and so it’s been sitting in my cupboard every since. It doesn’t really taste any different to me….is it bad that I still plan on eating it?  And should I be putting it in the fridge now after it’s been out for a few weeks?   Are these questions idiotic??  I think I’m pretty knowledgeable about food, but remember – I didn’t know EVOO could go bad!

Yesterday was the first day in a while, where I felt like I could head home from work, and I didn’t have anything else to do!   So I decided to make some tempeh that I had hanging in the fridge:

picture-0152

Inspired by Miss GC, I decided to try a bite of it raw…and I was surprised.  It wasn’t bad (I always psych myself up to expect the worst).  I could see myself eating this raw, but tofu – NO WAY.  And I’ve tried tofu raw – I just can’t do it – grosses me out big time!   Speaking of Miss GC – I used her famous rub on this – and it turned out perfectly!

I had some edamame and grapes on the side too!  I was very satisfied with the way dinner turned out!

But that’s not to say I wasn’t hungry when I was finished!

I had one of  those bottomless pit nights – so after “dinner” – I went straight for the PB Puffins:

That’s just bowl 1 (bowl 2 isn’t pictured!)  I also scarfed down some 100 calorie popcorn, which I also neglected to take a picture of!

Big shocker….

Steel cut spicy oats this morning.  I’m seriously obsessed.  I think Steel Cut oats may be up there with edamame – in the “HOW DID I NOT KNOW THIS FOOD EXISTED FOR 26 YEARS OF MY LIFE?!?!?!?” category.

I can’t wait for Thursday night TV (please tell me my shows are on tonight – RIGHT?!) – and then I’m headed in for a crazy weekend and week!  This weekend we are headed to PA, and next week at work is our huge annual sales meeting – so if I go MIA as of tomorrow afternoon – just know I’ll resurface (HOPEFULLY!) – sometime next Friday!   Happy Thursday!

I just recently used that exact same kind of tempeh! It was so good mixed with roasted veggies!

I also really love the TJ’s granola that you have! I tried their blueberry muesli as well (usually is right next to the granola in their store) and is one of my new favorite breakfasts! I let it soak overnight and then warm it up in the a.m. and eat it with some Greek yogurt. MMM, I think I am going to go make it now :)

Have a great day my friend!!!!

I love that granola from TJs. I was totally addicted for a good long time.

I love that flavor of light n fit….even if it horribly chemical filled, its just delicious! Have fun this weekend and I hope next week is interesting/goes well! I will miss you if you disappear!

I am still trying to experiment with tempeh. If you have good ideas share them please!

[Reply]

Okay, what exactly is tempeh. I see it everywhere in bloggieland, but I’ve never had it.

Steel cut oats are my fav, too!

[Reply]

Never tried tempeh before and I am positive no one in my family would eat it! Looks good though!

Steel cut oats are so good! I actually discovered them after seeing them on Oprah of all places! :D

I love using the phrase suck it – I just used it in my last post too :)

I know The Office and 30 Rock are new!! HOORAY!

Gotta love PB Puffins!

I’ve been watching old seasons of 30 Rock on dvd, and last night, I saw one where Liz yelled “Suck it! I’m going corporate!” I knew I loved that phrase. Your post confirms it. I agree! Suck it, winter! I’m very ready for spring.

Your eats look great, and I hope you have a fabulous weekend!

[Reply]

Hahahaha I love SUCK IT also! Especially because Andrea used to always say SUCK IT MCCAIN! Oh mercy.
I NEVER refrigerate nut butters. It’s totally not a problem. I’m sure some people would disagree, but ignore them – I’m right.

It’s true. “Suck it!” is one of the best phrases in existence. Your dinner looks so good. Tempeh love!

[Reply]

ehh, i say to keep doing what you’re doing with the bnpb. if it starts to smell bad, then you should stop eating it (of course), but i’m pretty sure it will last forever no matter where you keep it …
and yayyyy steel cut oats!!! they’re my favorite kind of oats, too.

AND way to to shake up the food arrangement (though i’m glad to see the spicy oats haven’t left town … sometimes reliability it a good thing!)

[Reply]

Oh yes, that granola is heaven!!!

[Reply]

I really like that tempeh as well! I haven’t tried it raw though. You are brave.
I would eat the BnPB if it doesn’t taste weird, but that’s me. I am a rebel.

[Reply]

ok can you tell me how you make your steel cut oats? I tried this morning and it was ok..but not great

[Reply]

i forgot to stick it in the fridge too and then put it in a week later…and I’m still alive :)

I love your dinner! And yeah, winter can SUCK IT bigtime
