That’s right – I have a HUGE NOGGIN’ - I’m talking – ONE- GINORMOUS-MELON for a head. Think I’m joking?

I bought a bike last night (WOOOHOO!!! no pictures yet!) – and was so excited to come home and show Mike all my gear – he started cracking up (as he rightfully should have) when I put the helmet on. His first question: “Did you look at yourself in a mirror in the store, so you have some idea of what you look like right now?” – I did!
I figure – safety first (right Meghann & Kelly???) – beauty second.
My point here – yes – I look wicked sweet with my bike helmet. Please try not to be jealous. Thank you.
Spicy oats for breakfast - should I just start skipping this meal since it’s always the same thing??

At lunch, I ran to my local specialty running shop. It’s where I got my running shoes, and where I’ve gone for every running related problem to date. I talked with the “main guy” there, and told him all about my ankle pain – and he thinks (I know he isn’t a doctor, but I was still interested in what he had to say) the pain is solely because of my transition from treadmill to outdoors. So I’m taking it easy the rest of the week, and have my fingers crossed for the race Saturday. THANK YOU SO MUCH for all of your feedback as well – I can’t stress enough how much your comments, links, and input helped me!
While I was at Second Sole – I picked up some loot!

For dinner – I had a hot date with Kristin!
Kristin made kale chips for the first time a few weeks ago (I’ve ALWAYS been too afraid) – and just kept swearing up and down how fabulous they were and that I needed to try them.
Listen. I’ve seen Kath talk about kale chips a million times, and plenty of other people try out kale chips and talk about how fantastic they are. But seriously? You are trying to tell me…that a dark leafy green, can somehow end up tasting like a potato chip? I’M.JUST.NOT.BUYING.THAT!
But at the same time – what foodie can turn down: A: a free meal, B: trying something new, C: a meal prepared entirely by someone else?
So here’s the feast Kristin prepared:

The verdict…

I don’t understand it! How can leafy greens taste SO-FRICKIN-UNBELIEVABLY-AMAZING?!?!?!?! I’m totally at a loss! This is my new favorite recipe – right up there with my discovery of falafels, and edamame recently! INSANITY!! I’m totally buying an INSANE amount of kale the next time! I really think I could even get Mike to love these suckers!
That’s it – off to finish the day, and rush home to play with my bike! Yep – I’m pretty much a 12 year old boy.

So I got a little taste test happy at the grocery store the other night, and bought several kinds of dressing to help spice up my salad routine since I’m becoming majorly burnt out! ![]()
Here’s my loot:

Anyhow! I tried both out on my salad yesterday:

Verdict: both were AMAZING!
The Ken’s Lite Caesar – has an awesome garlicky, oniony, anchoivey (e-e??) taste that is to die for! Although – make sure you keep at least an arm’s length from your co-workers the remainder of the day to not kill them with your breaff (I just made a word like Erin!)
The Ken’s Healthy Options Sweet Vidalia Onion - equally as awesome! This one has a spicy sweet kick – almost like dijon mustard mixed with honey!
Snack time got crazy with some Oikos:

Honestly – not my favorite combo…

The dried berries mixed with the kiwi and granola just didn’t mesh very well. Note to self - stick with pineapple in your Oikos!
Keeping in the taste testing spirit – I tried out the awesome sample I got from Foodbuzz, from Buitoni!

I wasn’t sure about these – being that I ABSOLUTELY LOATHE MUSHROOMS - but in the essence of being fair – I had to give them a try! I told Mike I was making these for his dinner, and I’d try a few. Here’s my serving:

Verdict # 2 – HOLY.COW. These things were REALLY GOOD! The middle tasted just like butter & cheese! (I did get one squeaky freaky piece of mushroom – but that’s what you “mushroom lovers” like about this weirdo vegetable right??) I would absolutely buy this again. That’s right MOM! I just said – I WOULD BUY A PRODUCT WITH MUSHROOMS! Crazy!
My real dinner wasn’t as “new and daring”:

Tofu, tomato, and an orange. While not earth shattering, it was still pretty damn tasty!
We watched the last disc of Twin Peaks Season 1 last night – and it just keeps getting more and more awesome! We’ve already moved Season 2, Disc 1 up in the queue – LOVE THIS SHOW!
For a snack while we were veggie out – I was craving something sweet, so I took one of my 35 calorie slices of bread, and made this!

Lando does this all the time. She’ll be happily playing, and then all of a sudden loses her mind and just DIGS!
