..homemade veggies wraps! See? It could be worse!
What’s shakin?!?!
I know I’ve gone and disappeared – I have a lot to catch you up on!
My work week was crazy again (hey – I’ll take it!), and then my weekend started right at 5:00pm Friday, and I’ve been going non-stop every since.
My camera battery pooped out on me Thursday/Friday – so I don’t have all my food pictures to show, but I do want to show you how to make my newest addiction – AN AWESOME HOMEMADE VEGGIE WRAP!

It looks a mess, but I promise it’s delicious! While I might have missed pictures Thursday/Friday, this is seriously all I’ve been eating, so you can definitely get an idea of my meals!
Here’s what I do….
Take a Flat Out (you can’t beat these, they are huge and only 90 calories), and spread on your favorite hummus – mine is Sabra Roasted Red Pepper:

Then add whatever veggies you like (that can be heated), I love red pepper, orange pepper, banana pepper, and red onion:

And add a slice of low fat American Cheese (the ones that are about 30 calories a slice) – and microwave for 30 to 45 seconds:

Top everything off with black beans, nice cold lettuce, and some hot sauce – and attempt to roll the wrap the best you can!

This is seriously amazing! I even made one for Mike (sans humus of course) and he liked it too!
Saturday I got crazy and added some edamame!

It’s super filling, and by my estimate, comes in under 300 calories – you can’t beat that! ENJOY!

That looks good. My problem is whenever I try to make a wrap, I put too much filling inside and it comes apart.
