Thanks for all your sweet comments on Murphy! I miss him like crazy (and was beside myself last year when he died) – so I just had to post something in his memory. I loved reading all your comments – THANK YOU!
Yesterday – I took a leap – and tried a breakfast smoothie for the first time. That’s right. I jumped on a bloggin bandwagon!
But it’s not a Green Monster… I shall call it…Ruby Slipper (Huh?!?!?! I know, right?!):

I don’t know – Ruby Slipper popped in my head. I’m running with it!

This was amazing!!! (Thanks for the guidance Liz!!!) – Here’s what went in…
- 1/2 cup of frozen cherries
- big handful of spinach
- 1/2 cup of vanilla almond milk
- tbsp of PB
Lunch was another broccoli slaw salad with balsamic vinegar and hummus:

As usual, VG brought me a snack to test out (I mean – hello, can grocery shopping get any better?) So I held off until lunch yesterday to test it out!

Sorry, but hearing the word “Germinated“…

…does not make me go “MMMMM, I’d like to try that!”
Verdict – “Eh”. It wasn’t bad, but it wasn’t great either. There was a really predominate raisin taste (luckily raisins were on the ingredient list)
Thanks for letting me try that out VG! You know I’m always a ready and willing guinea pig!!
Last night – I helped my friend Kristin move – so there wasn’t time for dinner right after work – but there WAS time for my new favorite treat – Medjool date with PB!!!

Yes – that’s PB on my finger too – I just go ahead and slop it right on there!
I didn’t get home until after 8pm – but I figured – better late than never when it comes to dinner!
I threw some crumbled up tempeh, onions, peppers, and black beans on the stove:

Added these spices for pizzaz!

and made some lettuce tempeh tacos!

These were really darn good – I would have changed 2 things though: 1 – I would have cooked the tempeh longer because some bites were still INSANELY bitter, and 2 – I would have used less cayenne, you know I love spicy – but this was pushing it for me!

I think I’m finally on the verge of kickin’ this “funk” I’ve had. I woke up this morning and felt better (not GREAT) – so fingers crossed! I haven’t done a single training run (granted – I’ve only missed 6 miles total) – but I STRESS out when that happens! What can I say, I’m a spaz!
Hope you are all having a great Thursday!

It could be due to the fact that apparently I’m a 12 year old boy on the inside but ‘germinated’ made me laugh! Love your rubies and those tempeh tacos look delicious

I think “Ruby Slipper” is a perfect name! The smoothie looks delish
Haha, why do they think “germinated” sounds appetizing? I definitely wouldn’t be advertising that in big letters on my brownie. Mmm I love those tempeh tacos!

I just have broccoli slaw tonight, delic! I never had whole pieces in a slaw like that before! Mom mixed it with fat free mayo, mustard and grocery store slaw like carrots onions, etc all chopped up. Your lettuce wraps look awesome too! And totally feeling you with your pup post. My baby is getting old and I can’t even think about…. well you know.
have a great night!!

I hope you feel better tomorrow girly! I personally refuse to eat anything with “germ” in the title. Well, except wheat germ. Gosh, what a stupid comment.

Mmmm…cherry smoothies. Yum!
Brownies are hard to predict. And hard to get right. I’ve had ones with great potential that disappointed and simple box-made ones that were great. And vice-versa.

Wow! That ruby slipper looks amazing! I’ll have to try that out, since I adore cherries (but not cherry flavored things-go figure)…I did rasberries in one of my GM but it turned out too sweet.
I can only imagine how much you miss Murphy. My baby is 8 years old now and I get worried when he doesn’t answer the door when I get home…to have lost him at 5 would have been devistating. But Little Lando is soooo cute, so I’m sure you are still in good doggie company!
Have a great weekend!
