I promise I’m on my last avocado from the large sack (TWSS!) I got at Costco – so you’ll be granted an “avocado-filled-post” reprieve pretty soon!
Yesterday was really, basically, as standard as can be, not sure what it is with this week, but I am as hum-drum as the come! (I like how that all rhymed!)
That being said – I’ll spare you the lengthy descriptions – you know what I’m eatin’!
Spicy Oats:

Hugh Jass salad:

Topped with guac:

Somehow this “little” guy found his way into my belly around 4pm. I told myself I was only going to eat half – but I ate the whole thing. And for that, I will NOT apologize! Lemon Poppyseed ANYTHING is my weakness!

See that muffin above? Remember how I said I wasn’t apologizing for a single delicious bite? After work, I went for my 3 mile run – and I changed my mind. That sucker just SAT there, right at the top of my stomach – and made the run TERRIBLE! Then I decided to Shred afterward – which was even worse. Oh well – you win some, you lose some!
For dinner – I wanted something quick and easy (and not involving the oven since it was warm outside) – so I went with a wrap:

Cheese, pinto beans, red bell pepper, banana pepper, and avocado – with a microwaved sweet potato:

Topped with MORE pinto beans:

Very good and VERY filling!
While I was laying on the couch feeling sorry for myself because of my neck – I decided having a sweet treat to chew on may remedy that. Enter – Fun New Purchase from Nature Bin #1: Ginger Chews!

I had seen these on several blogs – and I was definitely intrigued, although scared at the same time. I figured since the bag was only $1.99 it was worth a try…
Verdict: VERY VERY VERY GOOD! They definitely had that spicy ginger kick, but it wasn’t overwhelming like horseradish or wasabi can be! I’ll definitely buy more of these next time I’m there!
No big plans tonight – basically just lay low and plan for tomorrow’s long run! Sorry all my posts have been so lack luster this week! A hurt neck and a busy week at work makes Allison a dull food blogger.
HAPPY FRIDAY!

You are loving the avocado! It’s such a good idea though – using it as a dressing.
Is it just me or is the dude on the ginger bag a little freaky? Normally I’m all about food representing people and ideas, but that one creeps me out for some reason. Either way, I’m glad they were good!

Love all things avocado – and believe it or not, didn’t start eating them until a couple years ago – I missed out for so many years!

That muffin looks yummy! Sorry it made your workout icky though, I hate when that happens. I love those ginger chews, too! I’m so sorry about your neck pain, though. I hope it clears up soon–you’ve had it quite a few days now, right?
