Easy Peasy, Tuna Sal-esy?!

Next Wednesday is my 1 year “Blog-iversary”!   I’m working on a fun post AND a giveaway!  Is there anything specific that ya’ll would like to see?  If you have any ideas/requests/treats/highlights/you name it that you’d like to see next Wednesday – LET ME KNOW! :mrgreen:

I made a trip out to TJ’s this weekend – and made sure to grab some Puffins, which I have not had in FOREVER!

I do have to say though – “2 servings” looked very low in the bowl – I was sad that was all I could get for 220 calories! At least with the Cheerios – they are smaller so it looks like you are “getting more” for the same amount of calories.  :shock:

Lunch – Caesar-ish salad, with veggies and hummus:

After my tasty tuna salad on Sunday – and my very protein deficient lunch earlier in the day - I was craving more tuna at dinner time – but this time – I got REAL crazy (I live life on the edge), and threw some dark red kidney beans into the mix!

While I haven’t been very successful baking latelyI have a pretty good streak going on “meals I just whip up on a whim”:cool:

Here’s what went in to the quick tuna salad:

  • 1 serving of kidney beans
  • 1 can of white tuna
  • rough chopped pickles
  • curry
  • garlic salt
  • onion salt
  • crushed red pepper
  • cayenne
  • honey mustard
  • light mayo

That’s it!   Easy peasy!  :wink:

Have you ever made your own “caesar-ish” dressing? My mom makes this vinagrette based dressing and its TDF…I love making it and bringing it into work to use for the week! Let me know if you want the recipe…goes fab with homemade croutons but that’s just my personal “im a carb lover” opinion. OH and you don’t have to bake it! :)

I love puffins!! They are addicting, I usually like to munch on them for a snack. happy almost blog b-day! how cool looks like some great eats :)

I love Puffins! I need to cough up the money at the grocery store and give into my craving.

Kidney beans are my favorite bean because they’re meat-y, if that makes any sense! I find them very filling!

How exciting! Almost one year, very cool. I love giveaways that include bars (Larabars for sure) or other products like peanut butter or new healthy products that have just come out! Really, I like all giveaways :)

Your tuna salad is so my style. I love the hodgepodge of ingredients. And, I know what you mean about cereal. For 200 calories you really can’t get much in a bowl! It stinks.
