Me No Bake-y

Hi y’all!  How’s the week going?!?!  :wink:

THANK YOU SO MUCH – to each and everyone one of you who left me encouraging/supportive words on my last post. I tried to respond to almost all the e-mails, and I just wanted to say again how much I appreciate all of you wonderful people out there!  :mrgreen:

Things are getting busier at work (our busy season is the holidays) – so if I ever go MIA for a few days – have no fear:)

Sunday – we had NO plans at all – so I thought to myself -  “HMMM, what is the perfect end to a relaxing weekend?”

I came up with – a yummy breakfast:

and when I saw the 3 EXTREMELY ripe bananas on the counter – the idea of BAKING popped into my head:mrgreen:

Now – I must preface this picture with a question.   Have you ever really seen me bake on GDW before? Yeah – I didn’t think so.  I’ve made Tina’s “No Bake” cookies, and I’ll use the Weight Watchers “pop” trick to make cupcakes, but that is it.

As if (not the Clueless kind!) I needed a reminder as to why I don’t bake…

Yeah – my banana bread turned into banana crumble sand paper.  I just can NOT handle the exact measurements that baking calls for.  It looked a little dry so I added a ton of extra liquid.  I didn’t have yogurt so I added extra applesauce.  I had no idea how long to bake it – so I just stuck it in (TWSS?)  Yeah - COLOSSAL FAIL:shock:

I’m gonna stick to hodge-podge meals involving Frank’s Hot Sauce – it’s what I do best! :cool:

I definitely haven’t been getting enough protein in my diet, because every meal I am CRAVING protein and carbs – so for lunch Sunday -I whipped up some delicious tuna salad:

Dinner – I wasn’t super hungry, so I went and made my favorite easy dinner – Shirataki noodles with spaghetti sauce:

This whole bowl of deliciousness – with sauce AND cheese – was barely even 120 calories!!!  Now that is MY kind of pasta dish! :)

Lastly – as you may have heard me mention - I am going to San Francisco in November for the 1st annual FoodBuzz Festival!

Tuna is always my go-to when I’m craving protein. It always does the trick! Cute pic of you and your pup :)

I am totally the same way when it comes to not following the measurements. I like to just throw whatever in my dishes; I don’t like to be exact. I have, unfortunately, the same results as you do though!

i think its great that you have been listening to your body, regardless of what that means for your personal expectations. give your body the time it needs and you will be able to pursue your goals any day you want in the future.

I am with you when it comes to baking. I love to do it, but I’m not the best at it. You’ve just inspired me to go try though, I have some realllly ripe bananas of my own…banana bread!

sunday was Snack a Pickle Day! way to celebrate appropriately :)

as much as I love to freestyle in the kitchen, I love the precision of baking too! I find it very zen.

I would vote for you on the basis of that photo alone!

hahhahahahha – I think we’ve all had a baking experience like that. I’m glad you posted about it! I always wish they would show that stuff on the food network…you know that EVERYTHING they make doesn’t turn out perfect!

Oooh…pickles! I love pickles. Tuna salad needs pickles – even though I hate tuna. It’s best with sweet pickles though.

You just inspired me to bake some banana bread. Send me your addy and I will send you a loaf. No one should be nana bread-less. It will make up for the fact I don’t get to meet you in SF since I am too poor to attend. :)

Even though it probably stresses you out, I love that you say you’re getting busy at work because I LOVE the holidays :)

I rarely follow recipes…except for baking. Baking is more of a “science” and you need to follow the measurements. I find it hard to do too but always have. But recently I have been making some healthy substitutions and doing my own thing…so far so good but I’m sure I will have a spectacular fail soon!!!
Your tomatoes look beautiful…get em while they last now that it is almost autumn!

I am awful at baking as well. I screw up chocolate chip cookies every time I bake them! The thought of baking something even gives me a headache…

haha…i used to never be a baker either. i am not good with exact measurements, although i have gotten better. i need to try the shiratakis!!!!!!

BAKING….. Uhhhh! I live at high altitude. When I attempt to bake it normally turns into a disaster. Should I add MORE baking powder or less?? Should I use MORE egg or less. I always screw it up. Ha!! Anyway, I’m always scared to try Shirataki noodles. They look too slimy. I always see them on Hungry Girl recipes but I’m too scred! LOL! :D
