All of my arrangements for the Foodbuzz Festival in San Francisco are officially booked! I am beyond ecstatic right now!
All of your comments lately have been awesome - I loved hearing about all your personal food kryptonites, as well as how all of you are in the same boat with expenses. Sometimes, it’s nice to know you aren’t alone!
This week has been brutal and my mind is just fried right now! I don’t know if it’s the change in weather or knowing I’m going out of town at the end of the week – but I just can’t seem to get ahead of the game! Let’s get to it!
Spicy Oats:

Seriously – Frank’s Red Hot ought to pay me money for all the promotion they get.
My dinner Monday night was so great – I decided to create another variation of it for lunch Tuesday!!
I made half of it at home, and brought the other half to assemble at work. Pre-assembled: FF Refried Beans, onion, and banana pepper:

Then I added on a bunch of lettuce – and some very fresh, extremely delicious tomatoes:

AND WOLFED it down in 2 minutes flat! I am totally wrapped challenged (I inherited it from my mother) – Once I pick up a wrap – I need to CHOW DOWN!
I also had some UBER boring green beans on the side:

Lame!
I found these little packets while I was shopping Sunday – for about 40 cents a pop – who could pass that up?!?! Natural Freeze Dried Pears? Yes, please!

The entire package was only 40 calories – and there was a fair amount in there!

I would definitely buy these again! They were so yummy, and totally filled my “sweets’ craving for only 40 calories!!! (although I’m not sure my store always has them in stock!)
I was Snacky McSnackerson all day yesterday (AGAIN!) – so by 2 I was already chowing down on my snack! I polished off the rest of my Mariani apricots (Thanks Mariani – these ROCKED!), and a nectarine!

I swear, until about 2 years ago – peaches, nectarines, apricots, and plums were all absolutely the same fruit in my book!
For dinner I was on my own (Tuesday is Mike’s really long school day – he’s literally gone from like 7:30am until 10pm!) – so I decided to get a little crazy with things, and try out the lentils that had been sitting in my cupboard for a few weeks!
Wanna know the truth? I’ve NEVER had lentils before yesterday! Can you believe it? :sh0ck:
So I googled how to make them, and at the last minute – decided to add some home made taco seasoning, and make a Lentil Taco Salad:

Ya’ll. I am not lying when I say – I came close, REAL CLOSE…

…to shedding a tear this salad was THAT good!
I sat at the table by myself and took ungodly huge shovel-size-forkfuls is was that good! Man – have I been missing out! I really think I could even get Mike to like these, and I don’t say that often with “healthy” food!!!
Dessert was a repeat of last night – just a slightly “meltier version“:


I LOVED this homemade cherry frozen yogurt – but there was no happy medium. It was either rock hard, or runny. I’m sure I could change the recipe up and make a few additions to make it “smoother” – we shall see.
Okay kiddos – I really am spent – I’ve got nothing witty to close with other than the very standard : Happy Hump Day!

That lentil/taco salad looks amazing. Ibought some lentils recently at Trader Joes, now I want to try that!

Freeze dried fruit is such a fun snack. I get the mini packs of apples every time I got to WFs!!

hurray for trying lentils!! they are a wonderful food!!! so much to do with them too!!!
those freeze dried pears sound delicious, and I LOVE nectarines and peaches this summer! I used to never eat them!!!
And of course I am loving the Refried Beans wrap!!!

Lentils are amazing aren’t they! You are making me want to make a wrap for tomorrow’s lunch! Do you ever find the Flat Out gets a little soggy? I think I need to be really careful not to put anything wet in it when I’m packing and do what you did with adding it in!

I’m glad you liked the lentils!! I have to admit, I’m not a big fan. However, with your creaiton that might be an exception, it looked really good.
