Monday breakfast - The LAST OF THE CHOBANI!!!! Woot woot!

Funny thing is – I was in SUCH rush to eat them so they didn’t expire before I could get to them – when I turned the container over to see what the actual expiration date was - I realized I had until October 23rd to eat them. GO ME!
After my first meeting of the day – I came back to my desk to find - PRESENTS!!!!!

My friend from work, Chandra had an overabundance of eggplants this week between her garden and CSA delivery – so she was kind enough to give me the “overflow”! She always hooks me up with her extra veggies – and I can’t say thank you enough!!!!!!
Now - I need a good Eggplant Parmesan recipe!!!!!! PLEASE ADVISE!
Lunch was a repeat of Friday’s “scrounging” – hummus (with the healthiest amount of hot sauce!), and some veggies:

Last week I got a package in the mail – that I excitedly tore into – to discover:

Delicious samples from Funky Monkey! I saw these on Bobbi’s blog and have been DYING to try them ever since!
They sent me four flavors of ORGANIC, Freeze-dried fruit!! : Purple Funk, Jivealime, Bananamon, & Carnival Mix:


I love getting free samples (it appeals to the “foodie” in me, as well as the “save all our money because Mike’s in law school” in me) - but I finally decided to break into these for a snack on Monday.
For those of you who understand my chip addiction – you can probably tell which I chose first:


JIVEALIME! Isn’t that such a fun name?!?!?! I broke into theses suckers around 5pm to hold me over until dinner! These were just AWESOME! They were sweet and tart all at the same time – and had just the right about of KICK and CRUNCH! Thanks so much Funky Monkey – I can’t wait to try the rest!!!!
Things have been crazy for Mike at school lately – so I was totally on my own Monday night! I decided dinner should start with:

A nice glass of Cab!
Since I all by my lonesome – I figured it would be fun if I spent time cooking – and cook I did!

I made lentil taco “meat” for myself:

As well as oatmeal for breakfast, and 3 different lunch/dinners for Mike:

Not too shabby for one night’s work, huh?
Once I was finished – I actually sat down to enjoy a lentil burrito! I seriously can’t believe I went so many years without making lentils! But now that I’ve started – I want to make them all the time! They really are fantastic, easy to make (or hard to screw up – just depends on how you want to look at it!)

Topped with a little cheese, and some Ortega “Taco Sauce” – perfection!

I just got confirmation last night on a new contest – probably won’t be up until next week – but I am super excited!

I love lentils! They’re so cheap and nutritious and easy to make. I LIVED on them in Paris one summer. I’ve even thought that “lentils” would be a good name for a dog.

I just made a great eggplant parm on sunday for the first time! It was super easy. Here is the link, its a cooking light recipe. Instead of making my the sauce, I just used store bought marinara. So yummy!

That was very kind of your coworker. This is the recipe I normally follow for eggplant parm:
Slice eggplant and dip in egg white. Coat the eggplant with bread crumbs (I make my own by blending oatmeal in a blender and adding seasoning). On a cookie sheet, bake the breaded eggplant on 350 for 30 minutes. Be sure to turn it at least once to cook it evenly. Put one layer of eggplant in a glass 11×6 (or whatever the actual measurements are!) glass dish. Top layer with marinara sauce, and a combo of fat free cottage cheese, parmesan cheese, and mozzarrella. Top with another layer of eggplant, sauce and cheese. Bake until cheese is melted.

I love lentils, too! I don’t know how you ate nothing but yogurt for breakfast for so long–I would go crazy! I have to have the variety. But I guess you did have quite the variety of yogurts

i have a super simple eggplant recipe that just involves slicing, dipping in egg whites, then bread or panko crumbs. layer sauce, eggplant, cheese, repeat and cook at 400 for 30 minutes. voila! easy peasy. and you can add whatever fresh herbs you want to the dish. it’s not fancy but it’s so quick that i never mind cooking it up!!

What is in your lentil taco meat? It looks like lentils, black beans, another white bean, and tomatoes. It almost looks like a chili! I’m interested cuz that looks very tasty!

I love eggplant so much. Just last night i cubed up some eggplant and just put it in a pan on the stove and cooked it! it was amazing!

How funny, Nick is at work and I JUST made taco meat AND oatmeal for the next couple days (I have to wake up really early so I want to be able to just heat it up)!! We are too similar.
Regarding the eggplant, I don’t know any eggplant parmesan recipes but my friend did this wonderful thing with eggplants the last time I was at her house. She cut them into slices about 1/4 inch thick, layered them in a pan, spread some pesto on top, then put another layer of eggplant down, and did that for about 3 layers, then topped it with parmesan and cooked it for maybe 30 minutes. OH IT TASTED DIVINE!

Mmmm, I love eggplant!! So yummy!! All I know is that we soak ours in milk to remove the bitterness before cooking. But as Future Hubby does all of the cooking, I don’t know more than that!
