Hi you wonderful strangers!
Work has been so busy – but I’m a glutton for punishment, and I totally thrive on it – so while I’ve been missing you guys (and blog reading!) – I’ve been happily stressed (is there such a thing?!
)
Did ya’ll hear the big news? I now work with Taylor Swift!
Monday we lost internet connection for 2 hours (which had me pacing at one point because I did not have 2 hours of my day to lose!) – so to “calm myself down” (hello, emotional eating?) – I experimented with 2 new foods – Lindt Touch of Sea Salt, and my first batch of PB2 (thanks Kelly for letting me try it!)
Both were quite delicious!
Going back to losing 2 hours of my day…
Losing those hours on Monday put me so far behind, and stressed me out so much – that this may or may not have been my dinner Monday night.
Who can say really?
Yesterday – I switched things up and started my day with some Cinnamon Toast Crunch Naturals Toasted Cinnamon Squares
Reminded me of being a kid again!
For lunch I got gourmet (for me!) – and had some spaghetti squash with sun dried tomatoes (ever since Brandi had them I’ve been CRAVING them!):
with a side of cukes (Mike just cringed because I said that), pretzels, and Bothouse Creamy Italian:![]()
For a snack – I broke into some of my wonderful swag from the Foodbuzz Festival:
But I must say – this was a big fail for Frog Hollow Farm!
I gave these pieces of dried fruit a chance (this was my 2nd attempt at eating them) – but it’s not just that they are discolored:
They actually tasted BURNT.
And while I don’t have any fancy schmancy article to link to – I know there are studies out there that say eating BURNT food is bad for you because you are potential ingesting carcinogens (Oh yeah, and it tastes like crap). So into the garbage they went.
Snack time – take 2 – Tropical City! (oh man – I’m getting loopy…
)
Pineapple Coconut Yogurt (topped with some Annie’s bunnies from the lovely Danica and polished off with a Lime Zevia!)
For dinner – I wanted something FRESH AND HEALTHY, not just because I’m FINALLY trying to get back on track from San Fran (yeah – a full week ago now), but because it was actually what I was craving.
My creation? A tasty veggie mess!
In the mess:
- sweet potato at the bottom of the pile
- broccoli
- sweet onion
- sun-dried tomatoes (seriously obsessed, thanks Brandi!)
- pinto beans
- banana peppers
- topped off with green onions and a drizzle of italian dressing
- seasoned with garlic salt & crushed red pepper
TOTALLY HIT THE SPOT – and I licked the plate clean!
Dinner was totally a win!
(I then proceeded to go to volleyball and lose 2 out of 3 games – but hey – ya can’t win them all!)

Oh my gosh, those cinnamon squares look awesome! I loved cinnamon toast crunch when I was a kid–and a teen, lol.
Eew those dried peaches even look nasty. Love that zevia though, and you made a delicious dinner!

HOLY macaroni your salad looks indulgent and delicious!! I love that you have sweet potatoes in it (that’s what i always get at WF!!! and it makes my salad so freakin’ heavy!!! My record was $20 salad…ok maybe $23 to be accurate)
Sorry about the burnt tasting peaches. I’m sure you tasted them right and that they had overcooked them! That is SUCH a shame!! Aren’t they supposed to have high quality products???? Gahhhh Frustrating!!!

My boyfriend and I are both seriously in love with Taylor Swift. I just figured out how to play “You belong with me” on the guitar (it’s only four chords! Love it) and I practice it all the time. I’m such a dork.
