Thanks to my break from boozing the 3rd day – I was up bright and early on our 4th day – ready to seize the day! I went to the gym and spent 30 minutes on the elliptical. Yay for actually working out once on vacation!
After all that moving around – I thought we should take it easy
so we spent the whole morning laying out on the beach – being served drinks.
The best part about it all (surprisingly – I am not going to say the fact that they had waitresses to serve you your drinks so you never had to get up) – we were laying out on the beach, but the pool was literally right behind us. Best of both worlds!
(I like LOOKING at the ocean – but when it comes to swimming – I’m a pool girl, 100%!)

Once we got hungry – we went to the outdoors restaurant, right next to the pool, and I got these amazing nachos:
and was then ready for my afternoon nap!
While we were laying around the room, getting ready for the evening – Mike and I were watching Mexican MTV – and are now obsessed with this song by Panda: (at 0:36 – I’m pretty sure he says “I’m a cookie guy…”)
I mean – does that seriously rock or what? I may or may not be listening to it on repeat right now!
To go with my new found Mexican jams – a dirty martini in bed? Don’t mind if I do.

Vacation is the best!
Once I needed another drink finally got out of bed
– we went to dinner at the authentic Mexican restaurant at the resort – El Patio. Just like every where else at the resort – I loved all the decor!!!
They really like for you to drink at this place. (this shouldn’t be news if you read Recap 1, 2, or 3). Only 2 of the 6 (the last margarita is hiding) drinks on the table we actually ordered. But they brought us margaritas and wine just in case. I like that they want to play things safe.
We got 2 appetizers to start. First – Fire Roasted Salsa (that had an AWESOME kick to it!), Pico de Gallo, and Guacamole (that tasted oddly “banana-y”
)
Second – this awesome seafood quesadilla (shrimp, scallops & octopus) – I couldn’t get a good picture of the inside – but the presentation was still lovely!
My meal: Chicken & Beef Fajitas (Mike ate the beef part) – the little cones are filled with salsa, guac, and black beans!
Mike got some fancy fajita-ish meat plate: (quite the appetizing description, no?)
Both of our dishes were really quite amazing! And for the first time on the trip – we actually ate a “normal” amount!
Don’t worry though – after dinner (and apparently an outfit change for me) we went out for a few more drinks -
– and then decided we weren’t okay with this “eating a normal amount” thing – so we ordered room service, and passed out.

i’m not tired of reading these recaps. i’m living vicariously through you! i want to go to mexico so bad. if i could eat chips and salsa straight from mexico, i would be one happy girl!!!!

I love these recaps! I have to go to this place. I wonder if they do destination weddings…not that I’m engaged, or even dating anyone, it’s just nice to plan for the future, ya know??
