I’m not sure what came over me this week, but I’ve been feeling INCREDIBLY lazy when it’s come to breakfast. When I get lazy, this happens:
I’ve got PB in my desk drawer, and jelly in the fridge, so all I need to do to “pack breakfast” is throw to pieces of bread in my bag. I mean - when it’s that easy – can you blame me??
Lunch was all together just ODD. Remember that awesome dinner I made the other night? Well, while I could have eaten the whole avocado, I opted not to, so that I could save it for lunch the next day!
I also had some edamame left over, and that’s when I decided to get crazy (got help me if my definition of “crazy” has become combining food – when did I become old??
):
Edamame + Guacamole = EDAMOLE!!!

Now I’m 200% someone else has probably come up with that already, but after it popped in my head, I was really damn proud of myself. Yeah – I’m cool.
But for real – this was really really good. Especially because I like guac to have huge chunks of fresh tomatoes and I was out. Try it for yourself!
There was hardly time to breathe in the afternoon, let alone have a snack (have I mentioned Valentine’s Day is our second busiest holiday of the year at AG??) – but I did manage to find time for some after work drinks!
I stopped at Brother’s Lounge (yeah, just like last Thursday) with Angelina and her friend (turned my friend) Becky for some drinks and gossip! Sauv Blanc:
and then came home and tried to make a healthier version of a Taco Bell quesadilla! Turkey, Laughing Cow, & Mexican Cheese:
Started out good, but ended up horribly burnt, which I decided not to take a picture of for some reason (perhaps it was the wine?) Don’t worry – I still picked it apart and at the filling!
Last but not least – I don’t think I’ve announced it on here (but have definitely tweeted about it…) I’m going to FitBloggin’!!!!!
I seriously can’t wait!
I’m looking forward to meeting lots of bloggers for the first time, as well as seeing old bloggie friends! Not to mention – it’s being put on by Roni, who was the very first food blogger I ever found, and is pretty much my blogging idol!

My husband bought Pinot Grigio for dinner tonight – I always forget about Sauvignon Blanc!
My brother Charlie is speaking at Fitbloggin! He’s at http://www.backtothefridge.com. I may be going too, there a few obstacles but fingers crossed I can go!

I always love stopping by to check out your posts. You do such a great job with the pictures. I always say that I want to take more pics…and I usually remember after I’ve eaten half of my meal, or am already done doing whatever. Keep up the great work!
