Some days – I look at what I eat, and think to myself – LAME!!!! Why do you even have a food blog?!
Other days, I look at what I eat, and think to myself – DAMN! Where did you up with this stuff?!
Yesterday – was one of those days where I thought DAMN!
Breakfast – full on, old school Spicy Oats (special updated Spicy Oats “How To” post coming up soon!)
Is it just me, or does my egg look like a whale’s fin?! (I know – out of left field, right?!
)
For lunch – I wanted my wonderful sweet Poppyseed salad again, but I was officially out of pears. Quick thinking replacement:
Red Delicious apple, and orange bell peppers!
I made this sucker at my DESK! Am I impressive or what?! (Modest too, eh?!)
After a stop at the gym on the way home, for a hellaciously hot 3 mile run on the treadmill (I HATE the treadmill – I want it to be spring already so I can run outside!) – I came home, finally ready to tackle this sucker that had been sitting on my counter for a month:

Seeing as I didn’t want to just eat the squash plain I went into full on brainstorming/cabinet rummaging mode to find these:
Couscous, and some of the awesome Olive Oil I scored at the Foodbuzz Festival!
I also found 2 huge onions in my fridge that were about to go bad if I didn’t do something with them – so I decided it was time to take my first stab at caramelizing onions! (seriously – I don’t know what came over me last night!)

Since the onions and squash both took a while to cook – I had time to break into this:

Am I the only one who is obsessed with the clear little bowls they use on cooking shows?
As soon as I saw these – I knew I had to have them (yes – I am just making more dishes for myself!), and then I also order the Orka Stainless Steel Soap, to help remove stinky onion and garlic from my hands. I used it last night – but my hands still smell like onion today.
I guess my verdict is still out, I’ll give it a few more tries!
By the time I was done playing with my new toys – the onions were done:

Not to shabby huh? I mean – typically – I only cook with the same 5 boring things: beans, peppers, diced tomatoes, potatoes, and cheese – and NONE of those are in this dish! I’m so proud of myself!
And while I’m at all this “bragging about myself” thing – I will say – this tasted PHENOMENAL! Such a great combination of flavors! Who knew I could cook something new with out burning it? Score one for Alli G Dee Dub! (that was you, Birthday Girl Brookey, albeit a day late!)

Your dinner looks yummy. I have a set of those bowls too!! I think I got them at Williams-Sonoma. I love them.
I am not an oatmeal type of gal but I think I’m going to try spicy oats when you give an update. Maybe they can change my mind.

oh yeah that dinner does look really good. i feel like butternut squash in any dish immediately equals amazing. especially when goat cheese is involved. those two taste SO good together you should try it!!!
