Cookies!

So for once in my life – I was successful in the baking department!

I mentioned these cookies in my post last night – and I wanted to share the recipe with you! :cool:

Ingredients you’ll need:  (click here for measurements, I followed this recipe almost exactly – I made a few substitutions, but the measurements are all accurate!)

and 2 eggs!  I just happened to have Eggland’s Best Eggs on hand, from the lovely folks at Foodbuzz:

2 little helpers are optional.  Children are probably more helpful than dogs. :shock:

She got into the trash while my head was turned and licked up all the remnants of the yogurt.  Sometimes – you just have to laugh they are so cute, right? :lol:

First step – Preheat oven to 350!

Mix the oats, eggs, applesauce, peanut butter, yogurt, honey (or agave!) & vanilla:

Let the above mixture chill for a few minutes while you chop up the almonds (recipe called for walnuts, I switched it up!)

Zest/grate the orange peel into the bowl (don’t grate/zest any white – just the very outside!)

Doesn’t it look pretty??? I need to cook with citrus zest more often!

Add in remaining ingredients: chocolate chips, rice flour, baking soda, baking powder, and cinnamon – and mix!

Scoop on to baking sheet (top with apricots if you’d like – if not that’s okay too! :grin: )

Bake for 13 minutes on 350.

Voila!   Finally a baking success in the GDW kitchen! :mrgreen:   WOOOHOOO!

Bahaha that’s what the pupper gets for being sneaky! The hubbie and I love putting peanut butter on Daisy’s nose and watching her spazz out trying to get it. Hours of entertainment :)

I need to try those cookies! I wonder if I could use stevia instead of honey…

OMG, the yogurt on the dogs head is TOO cute! Makes me wonder if my dog has ever tried to eat out of the trash?

This morning I put Basil in his crate and I realized he had greek yogurt ALL over his face from me letting him lick the spoon. I figured he’ll take care of it throughout the day…

I was so hoping to see an nice choc chip oatmeal cookie without fruit of any sort…. but I guess you need it for the flavor. I am allergic to fructose (fruit in any form) and so I can’t try these… booo hooo for me!!! PS those dogs are very cute and look like great helpers!
