Fails

While I’ve been trying to experiment more with dinner, and branch out and try new recipes – my work week eating is so monotonous – I’m bored to death with it! :eek:

The only thing different about my PB&J breakfast toast yesterday – I burned the bejesus out of it (using the same toaster setting I’ve always used!)  Wah, wah wah (Janetha knows the noise I was going for!) :razz:   Fail 1.

I didn’t have any other breakfast options so I scrapped off all the “yuck” that I could and made due!

For lunch – salad with chickpeas:

Well – when I made the onions – I had no real plans for them, so when I came home to my whole house still stinking like onions – I knew I had to do something.  That’s when the idea of Whole Foods Caramelized Onion Hummus popped into my head!

I took 3/4ths of a can of chickpeas and 3/4th of all the onions I caramelized and made this beauty:

I didn’t add any seasonings or spices – it was ABSOLUTELY PERFECT with just the two ingredients!  Thanks to the olive oil I cooked the onions in – it was super smooth too!   :cool:

After work – I ran 4 miles with Kristin and came home starving (sound like every other night this week?? See why I’m bored to death?! :wink: )  The easiest idea I could come up with was this recipe I’d seen on Danica’s blog the other day:

Except I didn’t have corn to make it real succotash…so I used sauerkraut and water chestnuts, and I didn’t have any chili oil…so I used sriracha..

So it was WAY too spicy and vinegary weird.  Wah wah wah – Fail 2.  Next time, I’m going to follow the recipe exactly, because Danica’s version looks gorgeous and I’m sure – tastes just like it looks!

I was REALLY craving sweets again last night for some reason – but rather than go out and get ice cream – I made my own version of dessert – yogurt & granola, so I didn’t have to venture out in the cold…

…and then cuddled up with the pups on the couch to watch Modern Family!

I totally know that noise! I make it all the time :) bummer about the fails, but you know, that hummus looks darn perfect!

Its tough to make new and exciting dinners when working and working out!
Haha is your wah wah wah the sad trombone sound? Have you been to sadtrombone.com? My husband and I play it pretty often, and we always think its funny. :) We are easily amused!

the granola/cereal and yogurt combo is my standby dessert option too! it does get too cold to leave the house some nights in these parts.

OMG ~ Ali you crack me up! Saurkraut isn’t like corn hehe. I picked the the soycatash at Trader Joe’s too – it has the corn in it.

The chili oil is like sriracha so that is a great substitution for sure :)

Maybe if you ate a bigger lunch and/or had a more protein packed snack you wouldn’t be as starving when you got home?!

the hummus def makes up for an wah wah wah’s. im glad you have the willpower to not trek out in the snow to pick up ice cream – i need to channel your strenght!
