I really do find so many different foods very naturally beautiful in appearance. I know it sounds weird, but it’s true! I usually think this when I open a pomegranate and see all the pretty little arils, or when I start scraping out the inside of a spaghetti squash. I mean – how cool is it, that these things just naturally occur?!?!?! (you can see my inner former science teacher geek coming out!)
Yesterday morning – it was my grapefruit in the sunshine I found beautiful!
I love all the little strands of citrus that make up the whole fruit – they just look so juicy and perfect!
My favorite weekend breakfast – breakfast burrito: (it’s too hard to make to take to work)
2 eggs, Morning Star Sausage, and a sprinkle of Mexican cheese:
After breakfast – I put in some quality BAKING (yes, ya’ll – I said BAKING) time in the kitchen. One of the things on my “I will try harder” list was: I will try harder to bake at least ONCE a month. Yes – I waited until the last day of the month – but still!

Thanks to having fresh cookies around the house – my lunch and subsequent snacks all looked something like the photo above.
I put my long run off until Sunday (the high on Saturday was 19 – I just couldn’t bring myself to run outside, and god forbid I even entertain the idea of running 7 miles on the treadmill!). So – I braved 7 miles outside yesterday, and all said and done, it went pretty well. I averaged a 12 minute mile pace – not great by any means (I was down around 11 or lower last time I trained) – but I’m so grateful to be running – I’ll take whatever I can get!
When I came home – I made a quick list, ran to the grocery store for the week’s supplies – and decided to get “fancy” – and purchase these 3 things:
That’s the definition of fancy right? Having to mix up your own french onion dip, as opposed to letting Mr. Heluva Good do it for you?
Joking aside – this was AWESOME! I like whatever Lipton puts in their packets way more than the Heluva good jars – I’m totally buying my dip like this from now on!
Yes, that was my dinner.
My weekend eating has been really out of whack lately, but it doesn’t really worry me. It’s not like I’m eating McDonald’s for breakfast, 4 slices of Papa John’s for lunch, and Burger King for dinner. (and yes, I use that example, because the old Allison – did that scenario – on more than one occasion!
) So yes lunch was cookies, and dinner was chips and dip – but it all had a healthy spin on it, so it’s okay in my book!
I’ll leave you with – the cutest doggie picture I’ve taken to date (yes, I realize I say things like this all the time).
There are days when I still think Lando hates having another dog to share attention with – and then there are days like this:
“Yep, that’s my sissy, don’t mess with her.”

I can’t bring myself to run outside in the winter. I simply can’t. You won’t see me on the streets until it hits close to 60 I’m afraid.
Sour cream and onion soup mix dip is the best thing in America.
