I am SHOCKED!!!!
When I said the schnozberry line – I was totally thinking:
But apparently ALL of you were thinking:
Too funny!
I’m not sure if that says more about me, or ya’ll!
(I do heart the movie Super Troopers, I just totally forgot about it!)
While I am stocked on groceries this week – I’ve still haven’t had enough time in the morning to make oatmeal – so I’ve been sticking with the easiest quickest breakfast in town: PB&J toast, made at the office!

After my terrible week of eating last week – I started lunch off on the right foot and got right back into my pretty salads:
with a little PB and Chocolove for dessert of course!
Wouldn’t want it to be TOO healthy!
Last night I was looking forward to coming home and doing some laundry, and cooking a nice dinner! I know, I’m old!
(I’m 15 days away from being 28, I’m pretty sure at that point I have to cave and officially consider myself in my “late 20s” – AHHHHHHHHH!)
My dinner idea was inspired by this lady’s post the other day – that seasoning packet just looked too easy AND yummy!
This monster offered to “help” – but I passed
All you need to make the chili is:
- 1 packet of McCormick’s
- 2 cans of white beans *undrained*
- 1 cup of water
- 1 can of diced tomatoes (optional)
- 1lb of chicken – “vegetarian chicken” in my case!
I cooked the chicken, and then let it sit for 10 minutes, then shredded it and threw it in the pot, with all of the other ingredients
While the chili was simmering, I roasted a spaghetti squash in the oven (total of 45 minutes on 375 degrees)
Isn’t that just the prettiest/coolest vegetable you’ve ever seen???
Once the chili was done – I used it to top my bowl of spaghetti squash:
So amazingly delicious, and so amazingly easy! It was a really big winner with Mike too – he LOVED IT!
Any fun plans for tonight? I’m getting my hair trimmed, but all day today I’ve been considering CHOPPING it all off! HMMM, what to do, what to do…

Oh i def thought willy wonka! What a fabulous dinner! I love squash and all the fun varieties. Great use of the “spaghetti”. I can’t wait to see what you do with your hair! Exciting plans for the evening? Switching up Body Step Choreography, tv and dinner

That’s funny! I knew you meant “Charlie” but I also did think “SuperTroopers.” To be fair, we had a Trooper’s party recently and I watched the boys chug maple syrup so it’s a bit stuck in my mind!

YUM! How has the running been going for you with all that snow?!? I went a little too hard core after 2 weeks of being sick and think i pulled a calf muscle because it is still too sore to run after 3 days :/ Man am I pissed when things get n the way of running!

I just rediscovered my love for spaghetti squash this week! Yours looks totally delicious. I’m glad to see how you roasted it up because I wasn’t really sure how to cook mine, so I just halved it and cooked it face down in an inch or two of water.
