I can’t even bring myself to show you my boring PB & J breakfast toasts/slices anymore. I refuse. That’s what I had for breakfast. There. Done.
In more exciting news – my productivity at work has dropped to an all time low, due to this awesome Christmas gift from my in-laws:
I had no idea I would love an electronic/digital picture frame so much! I want to stare at it all day long!
It’s like having my own personal “happy” slide show – oh wait – it IS my own personal happy slide show!
Snack – “Buffalo Wing” flavored pretzel crisps:
Lunch was a teeny weeny (weeny, hehe) salad:
Seriously – look – that bowl is as deep/thick as my planner:
with some pickles:
I’m not sure what my deal is – all I do anymore is crave vinegar based foods! Maybe I’ve gone and killed all my taste buds with hot sauce??
Second lunch: SOUP!
and one of my successfully baked cookies!
When I got home from work, I had big plans for cooking! Mike wasn’t going to be home until after 8 – and I love cooking when I’ve got the house to myself, and right after I’ve gone to the grocery store – I always have so many supplies, and can cook up almost anything!
To help the cooking process? A little vino of course!
Though I had no REAL place for caramelized onions in my dinner plans, I still decided I should make them – if for nothing else – the wonderful smell!
While those were going – I chopped up 2 small white potatoes, and 1 sweet potato:
Tossed them in some olive oil & the remaining packet of Lipton “Onion Mix” from my Sunday purchase – and threw them in the oven:
The onions kept cooking down:
and I moved on to our “main dish”!
Ingredients:
I came up with/stole this idea when I saw what Quinn had to eat over the weekend!
Sandwiches with turkey, brie, pumpkin butter & apple slices:
While the taters were cooling:
I just quickly threw the sandwiches on the stove top to get the brie a little melty:
HEAVEN! This was another Mike approved recipe! I thought he wouldn’t be happy about the addition of the pumpkin butter – but he was! I can’t WAIT to make this again!
Disclaimer: It IS helpful to have someone else around while slicing the brie. I did this unassisted, and somehow – the entire brie wedge was used, and yet only 1/3 to 1/2 of it was on the sandwiches. If you get my drift…

I crave pickles too! I could eat them anytime, anywhere. Jars of pickles don’t last long in this home!

Oh my gosh those sandwiches look soooo gooey and good! I also wonder if there is something wrong with my tastebuds because of all of the hot sauce/crushed red pepper I eat!

That sammie looks like da bomb!!! Oh, and I eyed up those Buffalo Wing pretzel crisps today at the store but didn’t get them. Thinking I might grab them for a super bowl party with a blue cheese dip?!

1) Brie is the most addicting cheese EVER!
2) One of the partners I work for has a digital picture frame in his office and I’m constantly zoning out when he talks to me because I’m too distracted looking at his awesome vacation pictures or cute pictures of his daughter. Thank goodness he likes me!

I have a digital picture frame sitting in the box from our wedding. I really need to load some pictures and take it to work! It would make me so happy too I think…

I will look away from all those onions! Ha, my husband says the same thing – that I’ve burned off all my tastebuds from the hot sauce!
That being said, be on the look out over the weekend, I plan on making a buffalo chicken chili for Superbowl!!
My mouth is watering just thinking about it!
