Cooking Light: Black Bean Burgers

When I found this recipe in Cooking Light and it didn’t mention needing a FOOD PROCESSOR to make a Black Bean Burger – well – I just about passed out!

After I got over my shock – I made sure to bookmark the page, because I really have been DYING to find a good Black Bean Burger recipe, but I hate that they always require a food processor.

Ahhhh, Cooking Light, you know the way to this girl’s heart – that’s for sure!

The ingredients:

It gets even better!  Hold on to your hats, because I don’t know if you’ll believe me!  But I swear – for the first time EVER – I followed a recipe to a “T”!  SERIOUSLY!  Go me!

Check out this page at Cooking Light for the full recipe – and in the meantime – here are my highlights!

Fresh herbs and spices always smell so AMAZING!

BEANS! – from whole:

to “smooshed”

Side note: my kitchen looks NOTHING like a Food Network kitchen when I cook.  I think of my cooking style more as crazy lady or “spastic”, if you will!

Patties all ready to go in the oven!

5.2 029

Don’t these LOOK good for you?!  I love fresh ingredients!

5.2 030

Pop those in the oven for about 20 minutes at 350 – or at least that’s what Cooking Light told me to do!

While the burgers were cooking, I started to make the salsa.  I FINALLY picked a mango that was ripe enough (in the past, me v. mango battles always end up with the mango winning) – and holy heck was it juicy!  Do you see all the mess OUTSIDE of the bowl?

All the salsa ingredients mixed together:

Not only did this LOOK absolutely gorgeous…

5.2 035

…but it TASTED AMAZING!

Finished product:

5.2 042

With a side of baked fries (directions: cut potato, cooking at 350 for 20 minutes!)

5.2 046

Such a hearty (I hate that word, but it’s appropriate here) meal, while being WAY healthier and fresher than greasy, oily FRIED fries and a fatty burger!

And seriously – THAT SALSA!  Yumyumyumyumyumyum!

You might not be able to convince the carnivores in your family to switch over to veggie burgers for good – but if you want a running start – test them with this recipe!   It’s amazing!

Dang! Both of these CL recipes you’ve posted lately caught my eye in the most recent issue! Now I definitely have to make them :) Isn’t Cooking Light the best? I just did their Chicken Cacciatore last night, YUM!

Holy YUM that looks good! I don’t have a food processor either (actually, I got one for my wedding but it won’t fit in our apt) and it definitely restricts my recipe choices. I’ll have to try this one out soon.

these look great! i’ve made bean burgers a few times without a food processor since i dont have one either – a hand blender also works or just a fork! :)
