Thanks for all your kind words and encouragement yesterday!
I’m really trying to stay calm, cool and collected – but I’m definitely always THINKING about the race. I can feel myself space out, and I feel a lot quieter than normal (my friends and family are probably grateful!)
, because my thoughts keep drifting back to the race. GAH!
I promise – just a few more days and you’ll get your good old, quirky, spaz-y, dorky, rambling GDW back!

For lunch – I went with a salad that my friend Kristin has been talking about for ages, a salad that’s a little out of the norm for me!

Spinach, Cucumber, Tomato, Onion, Feta and STRAWBERRIES!
Topped with Balsamic Vinegar & Poppyseed dressing – it makes the most perfect combination of sweet & savory & tangy!

That salad kept me full until after 4 (I swear it’s the spinach, compared to regular lettuce!) – but I eventually broke down and ate my hummus and buffalo pretzel crisps! YUM!
Apparently my lack of focus (or should I say my SOLE focus being the marathon) has translated to my dinners, as I’ve yet to come up with an actual MEAL this week! It’s been all munchy stuff, which is fine, but I feel it’s less filling while being higher in calories!
Dinner – quick chunky homemade guacamole!
I picked up these cherry tomatoes the other day at the store, and they just might be the most perfect pint I’ve ever picked! (alliteration, much?) (1 – Did I really just make a 1990’s “Much?” joke? 2: I’m now giving my parenthetical digression’s parenthetical digressions????)
Easy and delicious dinner!
Out of NO WHERE – MY SWEET TOOTH decided to act up after dinner, and I knew I needed to find something sweet FAST, or I was going to end up at Dairy Queen (Mike was BEGGIN’ TO GO FOR BLIZZARDS!)
That’s when I remembered this little beauty:
After successfully picking out and preparing a mango the other week, I’ve been dying to try and do it all over again! I had no idea I liked the taste of a properly ripened mango SO MUCH!
This was JUST the sweet treat I was looking for, although – I was a sloppy mess when I was finished.
Is there an easier, cleaner way to eat a mango?!?!

I absolutely love that you eat chips and guac for dinner. I’ve seen mango pitters/slicers at Crate & Barrel, but haven’t a clue if they work. Why don’t you get a second mortgage and let me know?

Yum, that is my favorite type of salad. Years ago Panera used to have a summer seasonal salad with chicken, strawberries, blueberries and pineapple over mixed greens with a sugar-free lemon poppyseed dressing. So good! I wonder if they still do that.
I don’t like sugar-free dressings (I can’t deal with artificial sweeteners) so I started making my own salads at home with fruit, feta, spinach and balsamic vinegar. I so prefer baby spinach for salads over any other lettuce/mix. Now I’m craving a salad even though it’s cold outside.

I always just peel my mango with a vegetable peeler and then chop it up!

I love eating juicy fruit and having to wash my face afterward!
I am the same way with bananas..Once they’re yellow, they are only good for smoothies and bread. I like a little green

when i read your posts, i imagine that you type the words as fast as you talk in normal life. then i read them as fast as i possibly can. normally this works for me – but today i was very caught up on your paragraph with big words. can we keep the big words to a minimum?

I bought a mango slicer because I’m lazy and don’t like getting all sticky-like.
Is saying “much” not cool anymore?! I still say it sometimes!! Loser, much??
