Who is Kimberly Wickelman?

Your guess is as good as mine! They have this whole fancy new “Visitor Security System” set up at the Cleveland Clinic – where they take your picture and scan your driver’s license. Apparently – when they scanned mine (
) – I came up Kimberly Wickelman?
I guess I’ve got an alter ego, if I need one!
Now – I’ve got to be honest with you. If I get to eat a bagel with “cream cheese” every morning that I’m vegan – well then, perhaps I’m never going back to my old ways!

Calorie-wise – this measures up exactly to my spicy oats, and let me tell you – spicy oats just isn’t the same veganized. That first week, I just had to gag down my breakfast if it involved oatmeal. So – looks like my 30 day Vegan Challenge is also technically – a “Eat a Bagel for Breakfast for 30 day” challenge.
Lunch: Leftover, spiced up!

I had extra filling, but zero leftover tortillas. What a conundrum!
Then – I remembered my pretty little pita pockets. Stuffing + pita = Enchipitas!

After work I ran to Fitworks, so Heather could kick my butt in Power Class again,
and by the time I got home and walked the dogs – 2 very important “meal factors” came in to play.
1 – I was hungry. Like, stat! I did not want to deal with prepping, and waiting for things to cook.
2 – I was HOT. The last thing I wanted to do was turn on the oven or the stove.
So, that said, while a girl can ONLY have so many enchiladas (or enchipitas)
in a 48 hour time span – I decided my only option was to whip out last night’s (Almost*) Vegan Enchilada leftovers!

I’m perfectly okay with that!
How do you feel about leftovers?
I LOVE THEM, but they can not be frozen. Once frozen, I think they taste like garbage! I also think they can sit in the fridge for up to 6 days, but I know a lot of people think that’s way to long!

I adore leftovers, but I’m also the one who gets a little creeped out by leftovers that sit around for more than a few days. It’s weird how nervous it makes me… lol

I am iffy on leftovers. I can’t go one way or the next, because it all depends on the day. I am total split personality with them, one day I’ll love them, the next, I’ll want nothing to do with them!

there are only a few leftovers I’ll eat
OMG @ 6 days . My future f.i.l is like that but a tad more extreme. He does not believe that you are to pay attention to expiration dates on condiments , salad dressing, sour cream or eggs!
My theory is , if its not eaten in 3 days I toss it . Otherwise I end up with a fridge full of rotten leftovers.

Ha!! I’m a leftover whore! I’ll usually eat them until they’re gone (within reason, of course) but J won’t eat them after a day or two. That’s fine, more for me!!

We have a similar visitor check in system at the high school I work at and it is always doing crazy things. Once it said my birth year was 1945 (um, not EVEN close) and another time it put a number in my last name! Actually, I don’t think it has ever gotten the spelling of my name right. Crazy.

I love leftovers and totally think that after they are frozen they do get NASTY!! But I will also eat leftovers up to 2 weeks after I made it, because our foods today have so many preservatives as it is, so I am NOT worried about getting food preservatives from leaving it in the cold fridge for over a week!!

love love love leftovers! i HATE wasting food, so i will eat the same thing for a week if it means i dont have to throw any food away.
as long as the leftovers dont smell/taste funny, and i dont get sick the next day from eating them, anything is fair game

I love leftovers
When I’m on a regular work schedule (aka school) I strategically make leftovers so that I don’t have to fix a lunch. In the summer not as much because I try to enjoy fresh salads more often. But during school, it is a delicious and cheap time saver!

Who were you visiting in the hospital?????? I hope everything/everyone is OK.
They don’t do that photo ID think at the Clinic’s Main Campus except in the children’s section. It breaks my heart when I see adults with those stickers on because I know they are visiting a sick child.

6 days? hahaha i love that you wont freeze it but you will eat it for 6 days after you cook it. im the complete opposite. i will freeze for months but will only eat leftovers 2 days after i cook usually.

I am the queen of leftovers, but my husband won’t eat them – ever! Except for meatloaf, which he eats sliced cold, with ketchup, on white bread. Kinda made me throw up in my mouth a bit just typing that!

Kimberly…that cracks me up, as do the enchipitas
I ADORE leftovers and purposely plan for them. Rarely do Ryan or I even take them in our lunches bc I like to save them for dinner and avoid cooking one or two nights a week. Leftover haters are missing out!

I let my leftovers go for about a week, and then after that they start to taste a bit off so I usually toss them. I love freezing things though! I think the trick is to make enough so that you can freeze it before the actual cooking process takes place, you know?

I can only eat leftovers one time. If I have more than one serving leftover I’ll get bored and won’t eat it, then it’ll go bad and I’ll feel major guilt when I have to toss it.
I try to cut recipes in half now when I cook so I’m not left with a ton of stuff.
