Vegan Pad Thai

I’m not sure what my deal was all weekend – but I never really WANTED breakfast.  :(

I’d wake up, do my usual wandering around, computer checking, random cleaning up, but breakfast never happened. :???:   I think maybe because my oatmeal grossed me out so much all week, but who knows?!

Early lunch definitely made up for any meals I skipped! :cool:

Everything Bagel Sandwich

  • TJ’s Everything Bagel (CLEARLY marked vegan!)
  • TJ’s Tuscan White Bean Hummus (CLEARLY marked vegan!)
  • Cucumbers, Tomatoes, Pickles, Onions
  • Tofutti “Better than Cream Cheese” (with a dry packet of “garden vegetable seasoning” mixed in to make "Garden Veggie Better than Cream Cheese”)

I could eat this sandwich every day, and I’d NEVER miss meat or cheese! :shock:

All of my afternoon snacks were not pictured :shock: because I felt THAT ravenous every time I realized I was hungry :oops:   Like 0 to 60. And I know when I’m just thirsty.  Not sure what the deal is – but this week I’m REALLY going to try and reign this hunger, and really make sure it’s not just all in my head! :eek:

For dinner – my computer & I got to work, making Vegan Pad Thai! :razz:

I googled roughly 7 different recipes, and then just kind of ran with it on my own.

The most important ingredient?!  The Pad Thai noodles, OF COURSE! :mrgreen:

Step 1: instead of boiling water and cooking the noodles like I traditionally would, the package instructed me to soak the noodles in cold water for 30 minutes.  WHA-HUH?!? :shock:

Weird, for sure, but I do as I’m told! :wink:

While the noodles were cooking (??) – I got all my veggies going on the stove:

Veggies:

  • roughly chopped onion
  • roughly chopped peppers
  • shredded carrots
  • garlic (not necessarily a veggie, but it was in there)

Sauce (whisked together in a separate bowl & then dumped in):

  • 1/4 cup soy sauce
  • lime juice (I had two limes, but more would have been even better!)
  • 2 TBSP peanut butter
  • 2 TBSP Frank’s
  • multiple dashes of rice vinegar (as needed)
  • multiple dashes of seasame oil (as needed)

After the sauce/veggie mixture is combined – add in strained noodles and let sauce thicken for 5-10 minutes:

You could VERY EASILY add some tofu to “beef” (hehe, beef.) the dish up, but you’ll need to make sure you don’t BURN IT, like I did.  :evil:

Finished product – topped with dried chives:

This was VERY GOOD, but definitely dry, I didn’t have enough sauce!  I’m positive the issue was because I had more noodles than I realized, but by then, it was too late! :)   Next time – MORE SAUCE! ;)

Both the bagel and the pad thai look amazing. I love pad thai but I’ve never tried making it on my own.

That bagel sandwich, oh my god! I like Pad Thai, but my favorite part is definitely the egg strings :( I think I’ll make pb noodles sometime soon though.

I’ve been missing for a few days but in catching up you are doing SO WELL with this challenge! I’m proud of you…not sure I could do it, that’s for sure :)

TJ’s everything bagels are our FAVORITE! They never last long around our house and we do the same thing as you–make awesome veggie sandwiches. Your pictures made me hungry… :)
