Simple Salmon Stir Fry

Wanna know what happens when you live on the wild side and don’t take a grocery list to the grocery store?

You end up with a whole bunch of delicious stuff in your house – but no real recipes ideas to tie them together!

Have no fear though  – the very thing that makes me terrible at baking, is a blessing in this situation…

…I excel at wingin’ it!

So I give you – Allison’s Simple Salmon Stir-Fry

8.30 010

Throw a hole bunch of veggies in a pan, on medium-low heat. In my pot:

  • Extra Virgin Olive Oil to coat the bottom of the pan
  • 1 Vidalia Onion
  • 1 Hot Hungarian Pepper
  • 1 Jalapeno
  • 3 Handfuls of Fresh Green Beans

While the veggies are cooking – prepare your starch!

In my case – trusty Trader Joe’s Brown Rice:

8.30 004

WHICH – much to my delight – came in 3 separate serving bags, instead of the 1 large bag I was expecting! (it’s the little things!)

8.30 013

(yes, I noticed it clearly says 3 pouches on the box NOW, but I did not when I purchased it! )

While things were shaping up deliciously – I realized the dish was lacking protein, so I went and did some cabinet research, and came up with this:

8.30 020

Perfect!

While veggies are delicious on their own, I decided to add a dash of the following:

8.31 038

  • Organic Tamari
  • Sesame Seed Oil
  • Rice Vinegar

All together now:

8.30 023

I had the pan on the stove top for 20 minutes tops!  Like I said – I wing it, so I just decided on “done-ness” based on look and smell! :)

8.30 026

It might not be the most beautiful looking dish, but I assure you it smelled and tasted AMAZING! :)

8.30 030

Enjoy! :)

“F” Words

My weekend can be summed up in words all starting with “F” :???:

Fabulous, Fun, Friends, Family, & Food (I guess you could throw “furry” in there too, which pretty much sums up my Friday!)

Saturday lunch date at Chipotle with Mike

8.29 0018.29 002

Catawba family play time – involving LOTS of swimming, chatting, laughing, and of course, EATING!

8.29 0088.29 0118.29 0158.29 016

I’m not sure what this recipe is – I just call it Awesome Beans

8.29 020

This picture makes me smile

8.29 024

That’s just a small fraction of my (Dad’s side) family. Imagine how long the line would be if the other 20 people were there! :)

I’d been picking at food ALL.DAY.LONG. so I kept it simple and went with pasta salad, potatoes, and Awesome Beans!

8.29 0258.29 027

And wine.  Of course wine.

Sunday was filled with multiple walks for me and the pups – we went with Kristin in the morning, Mike around lunch, and Heather in the late afternoon.

As if that wasn’t enough fun with friends – Becky & Angelina showed up at my house and kidnapped me…

…blind fold and all!

8.30 001

Then proceeded to force me to have a Sunday Funday!

8.30 003

I’m sure you can imagine how hard I fought them, and how much I begged them to take me home!

Now that – is a what I call a fun-filled weekend!

What sort of “F” words was your weekend filled with?!

BYODDD

You might have heard of BYOB (Bring your own Beer) before, but have you ever heard of BYOD? :???:

Bring your own Dog, Dish, and Drink

8.28 007

The pups knew something was up, when we “leashed up” and then didn’t go for a walk, but instead hung out on the front porch waiting for our ride to come.

Mommy – this is no walk?!?!8.28 011

Alicia had the fabulous idea, that our next Cleveland Blogger Dinner should involve our four-legged friends, and was also kind enough to offer to host the whole shin-dig. Count us in!

Oh. My. Dogness.

The players:

  • Grady – (belonging to Alicia)
  • Diddy – (belonging to Heather)
  • Lizzy – (belonging to Katrina)
  • Bacon – (belonging to Suzanne)
  • Lando & Harvey – (belonging to Moi)
  • Good sport human spectators:
    • Katie (fabulous CLE blogger I just got to meet for the first time!)
    • Alycia (fabulous YSU blogger I just got to meet for the first time!)
    • PIP Mom (who was a fabulous co-hostess with Alicia, and obviously passed her skills on to her daughter! )

Insanity in action:

The spread that Alicia and her mother put together was absolutely amazing!

8.28 0318.28 0338.28 037

I’m pretty sure I had dreams about this pasta salad last night, it was that good! :)

8.28 0358.28 0388.28 0398.28 0408.28 041

Foodies in action  (also – apparently Alycia locked Alicia out and told her she couldn’t have any food?! )

8.28 042

My spread, which after 5 minutes was entirely gone (and I may or may not have contemplated licking the plate clean) ;)

8.28 046

There was a small peanut gallery who did not appreciate being left outside while their Mommy’s were eating  (of COURSE one of mine is part of the group)

8.28 048

Which slowly amassed into an angry mob!  (look at the height on Bacon!)

8.28 049

The dinner ALSO just happen to coincide with Grady’s 4 Birthday.  Hey – every Golden Retriever deserves a party and a cake!

8.28 051

Cassata cake with apricot filling instead of strawberry!

8.28 054

I can’t imagine a better night for a dog-lovin foodie like myself!  There was amazing blends, awesome wine, phenomenal food, and dogs galore!

Thank you so much for a wonderful evening ladies, and thanks to the whole Poise in Parma family for letting us invade your space for the night!
