After my fun-filled weekend – I’m definitely feeling the need for detox
Thanks to a very smart FRIDAY NIGHT shopping trip, and a sweet stockpile of samples from Amazing Grass – I was able to hit the ground running this week (even though Sunday I barely moved myself from the couch)!
Chocolate Strawberry Pineapple Breakfast Smoothie?

Kidz. With a “Z”. You know they mean business.
I have to be honest – I loved the Kidz Chocolate flavor WAY MORE than I loved the Adult Chocolate flavor! It was WAY milder – you can even tell by the final color of the smoothie!

For lunch I whipped up a cucumber salad (not sure if that is even a thing but I went with it!)!
2-Minute Cucumber Salad
- 1 English Cucumber (chopped to whatever size you like)
- Cherry tomatoes
- 1/4 of a Sweet Onion
- Yellow Bell Pepper (optional)
- Ground Pepper (I used my TJ’s Rainbow Peppercorn Grinder)
- 1 TBSP Olive Oil
- 2 TBSP Balsamic Vinegar
- Basil (as much or as little as you like – again – optional!)

This was SO flavorful and filling (and low in calories) – perfect for detox!
Plus a late afternoon apple

I go through love/hate phases with apples, but right now – I’m majorly in love. My top choice – GALA!
For dinner (HOLD ON TO YOUR PANTS) I made a vegetarian meal…
…and MIKE AGREED TO TRY IT!
(and I’m pretty sure just because I said that on the blog now, he will absolutely refuse to try another one – but hey, I figure it’s worth the risk!)
Mama Pea’s post on Chickpea Tacos yesterday reminded me how much I love BEAN tacos – so I went right home, and made my own!

Except I subbed Great Northern Beans instead of chickpeas – but I’m totally okay with that – so you should be too!
My seasoning included unmeasured amounts of: cumin, paprika, chili powder, onion powder, garlic salt, and cayenne

What’s the most EXCITING thing you’ve ever convinced someone to try?
I’d say getting my little brother to be open minded about a Bloody Mary, or having my Aunt try tofu. I know those aren’t CRAZY exciting – but still – they were big for me!

Yes- smoothies and fruits and veggies always make me feel better. Yayy for Mike! See veg- can be delicious! Convincing Josh to try cashew cream in a vegan asparagus soup? That was TOUGH and now he LOVES it

I prefer the Kidz version too.
I was incredibly excited when I got my husband to try guacamole. He hated avocados but now he loves them as much as I do.

I make cucumber/tomato salads all the time! I’ve had an abundance of both in my CSA deliveries this summer, so I am constantly throwing the two together with some balsamic vinegar and black pepper! Yum!

I get major ‘tude from my fiancee when there is a meat free meal. Sometimes he’ll be ok if there are beans, but if there isn’t some obvious source of protein he gets cranky. I just tell him he can make his own dinner, thank you very much.

cucumber salads are legit! my hubby and i were just in san diego where we discovered the BEST PIZZA EVER…and we started first with a cucumber salad
(it was cukes, tomatoes, unsalted cashews, basil, and black sesame seeds…delish!)
