Cooking Light: Farmer’s Market Potato Salad

My friend Kristin was talking about this delicious Potato Salad/Dish she made last night – and I have to be honest – it was all I could think about the rest of the day!

Throw on top of that the fact my stomach has been WAY off lately (hence the deviation from regular posts – I’ve been eating WEIRD STUFF or nothing  ) – and a nice vegetarian dinner sounded wonderful!

The main players:

8.31 0108.31 020

  • 2 Washed Potatoes
  • 1/2 Pint of Cherry Tomatoes
  • 1 Bag of Frozen Corn

Spices/Seasonings:

  • Mustard
  • Rice Vinegar
  • Salt & Pepper

8.31 025

My own crazy additions, because I’m physically incapable of following a recipe as planned

  • Frank’s (instead of Tabasco – not a big switch)
  • Basil (picture above)
  • 1 Small TBSP of Mayo
  • Lotsa Deli-Slice Pepperoncini

8.31 067

Throw the sliced-any-way-you-like-it potatoes in the oven at 425 for 30 minutes.

While the ‘taters are cooking – get working on everything else!

I decided to “caramelize” the onions & pepperoncini on the stovetop for about 20 minutes:

8.31 026

Then got to work quartering the cherry tomatoes:

8.31 011

And chiffonade-ing the basil:

8.31 032

For the dressing – I mixed:

  • 2 TBSP Mustard
  • 2 TBSP Rice Vinegar
  • 1 TBSP Mayo
  • Just a small splash of Frank’s
  • Salt & Pepper to taste

Then WHISKED like crazy.  With a fork.  So – I forked like crazy?

8.31 040

I cooked the corn in the microwave, since I had a SteamFresh bag – and then threw it on the stove with the peppers and onions to keep it going:

8.31 049

When you are finished doing all that prep – your potatoes should be just about golden brown!

8.31 045

Who’s ready to start mixin?!?!?!

8.31 042

I started with the potatoes & dressing:

8.31 051

Then added in the corn/onion/pepper mixture:

8.31 054

Then threw in the tomato/basil mixture:

8.31 060

and VOILA! ;)

8.31 061

Eat your heart out mayo-based potato salads (I added a SMIDGE of mayo – this isn’t mayo based, silly!) – you got nothing on this fabulous dish!

8.31 064

Seriously – I actually did a little giddy jump/squeal when I tasted this!

It’s THAT good!

I know – I seriously did a triple take when I saw your post titled “Farmer’s Market Potato Salad” – as I was SITTING DOWN to eat the same recipe :) Too funny!

Looks so good!! Bring me leftovers, sister!

I made that recipe a couple weeks back! LOVED it!

It’s a total make-again… except I wouldn’t roast the corn as long I think. I blackened a bit of it.

I liked your version – I felt like I was kind of cheating using the frozen corn, but oh well! ;)

That looks fabulous! I want to try it. I also really want caramelized onions. Yum.

Oh I am such a sucker for potato salad. Especially the kind from Costco, which is not healthy in any way.

More importantly, I hope your stomach feels better! Dealing with those kinds of issues SUCKS. It is no fun to not eat.

Ooooh! Yum yum. Saving this one for sure!

MINE WAS BETTER. DUH.

Forget Glamour and Cosmo – Cooking Light is my favorite magazine. I literally smile with delight every time I open the mailbox and see it’s arrived.
This recipe is marked – and you just gave me a reason to make it even sooner!!!!

I’m totally with you Emily! And sadly – I didn’t really UNDERSTAND that Cooking Light existed for so long! Then one day I was babysitting at a friends house and found her copy and was all like “O.M.G. this is officially the best magazine EVER!”

This looks great! I am definitely making this for upcoming labor day weekend cookouts. Thanks : )

The potatoes look perfectly cooked!

Oh, Cooking Light, you do so well sometimes! I love a good solid recipe, they can be hard to find sometimes.

[Reply]

I love that you and I have pretty much the same condiments! :D Looks delicious, of course, without the onions :D

Just wanted to say hi! I found your blog a few weeks ago, and I’m really enjoying it. That potato salad looks amazing. I love the addition of corn and tomatoes, and exclusion of mayo! Will definitely be trying it.

The idea of oven roasted potatoes in a potato salad is wonderful. I can image the texture not only floors you but the flavors added by corn, tomatoes, OMG! Great dish.

Thanks Joanne! I’m not even exaggerating when I say I did a little skip – it turned out 20 million times better than I thought it would, and I had high expectations from the beginning! :)

This looks awesome! My stomach is growling – I need to give this a try.
