Spicy Sausage & Peppers Penne

Ask and you shall receive!

Blog reader Linda sent me a note, after noticing my love of all things spicy, and asked if I had an healthy recipes for Spicy Sausage & Peppers Penne.

I thought for a second – and the following things crossed my mind:

  • YUM! That sounds delicious!
  • I DON’T have a recipe!  How could I let this happen?!

Not wanting to let loving reader Linda down (or, in other words: SOO in love with the idea of Spicy Sausage & Peppers Penne and the idea of chowing down on it) – I got right to work “crafting” a recipe!

(PS – I realized as I was uploading these pictures – the setting on my camera that helps make everything look less shaky?  Yeah – it was turned off, but I didn’t notice. So, sorry these are a little blurry! )

The piece-de-resistance: Lean Turkey Hot Italian Sausage

These are spicy, spicy, spicy, and only 130 calories a link.  If you can find these near you – I HIGHLY recommend them!

1st: Get a pot of water boiling on the stove.  Once it’s boiling, add your pasta, since that will take the longest to cook!

2nd: Slice up the peppers and the onions and throw those in a pan (thoroughly sprayed with Pam), and let those cook over a medium/low heat while you are getting the sausage ready.

I used 3 peppers, and 2 onions!  The more veggies the merrier!

3rd: Since Mike is VERY MUCH a carnivore – I decided it was best to just make the entire package of sausage.  I took the casing off all five links, and broke them into tiny, more manageable pieces.

Boiling water/cutting veggie preparation aside – the whole meal is ready in 10 minutes!

4th: I added a decent amount of crushed red pepper and garlic salt to my serving – but obviously – you could season to your liking!

Voila!

All mixed up:

ENJOY!
