I can honestly say – I’ve had dreams about this dip, it’s THAT good.
I could also say I’ve definitely had a stomach ache or two from eating so much of this dip – but that’s far less glamorous!
The ingredients:
- 1 can of refried beans (I always go with the fat free can, because honestly, why not?)
- 1/2 cup mayo
- 1/2 cup sour cream (plain greek yogurt would work as well)
- 1 packet of taco seasoning (not pictured here, but shown below)
- Cheese
- Whatever veggies you’d like – in my case: pepperoncini, olives, green onions, tomatoes, caramelized onions
- Optional – salsa

Mix 2 spoonfuls of salsa into the refried beans, and spread it all over the bottom of your pan – to make the bottom layer:

Add caramelized onions to your half only, because you love onions, and Mike is weird

Mix the 1/2 cup of mayo, 1/2 cup of sour cream & taco packet together (I added more salsa here, but you don’t need to if you don’t want to!):

Add that layer on top of the beans (& caramelized onions):
(sprinkle your half with cayenne pepper, if you are a spice freak like me!)
Add the vegetables of your liking:

The last layer? CHEEEEEEESE!

After 20 minutes in the oven, at 350:

Quick, easy, cheap, delicious, and appealing to EVERYONE (read: “even Mike!”) in the house!
P.S. – if you really want to put people over the edge – serve it with Fritos
If you want to be boring, serve with tortilla chips

Layered Mexican dips are my favvvvvorite!!! I always look forward to summertime parties because I know others will provide chip dips. Also that is the only Sour Cream that I like.

This looks yummy! I like MJ’s side. LOL Hey I just happened onto this chick’s blog today. Hers is more for the fat of heart (obviously me), but you’ve got to admit the bacon cheese biscuits look delish! You could easily adapt this recipe for the skinny girl motif. Thought you might like it anyway….

I love taco dip, but I’ve never had it heated up before! That would be very interesting. Also, never had it with Fritos, which is crazy! How did I not think of that. Fritos would be sooo good with taco dip.
