I’m not sure what it is lately – but my eating on the weekends has been crazy!
No meals, just random large snacks, all throughout the day. And it’s always strangely thrown together stuff.
Oh well – whatever works, right?
Monday – I definitely welcomed back my schedule though – it makes me so much more accountable for what I eat, and it makes me think ahead.
Breakfast – the last of my jar of Trader Joe’s Quick Cook Steel Cut Oats
(say that a few times fast)

I’m not sure if you can see it – but I smushed up some raspberries and mixed those into the oats and THEN topped the oats with whole raspberries. Yeah – I’m super creative like that.

Lunch – I did not make, but I most certainly enjoyed!

This was a delicious chili mixture – and I loved the avocados on top! (I did NOT like the mushroom that was peaking out from behind the avocado – but I was a grown up, and just ate it! Squishy and gross – mushrooms are the WORST!!!
)
Dinner – was amazing. Seriously – hold on to your pants.
Avocado Potato Salad!

So again – I’ve failed you on the step by step photos. But to be honest – there really was no step-by-step, there was just a whole lot of wingin’ it!

I can still TELL you how I made it though!
Step 1: Cut up 3 medium sized potatoes – toss them in olive oil, and start baking them in the oven, for 40 minutes, at 375.

Step 2: Google random things – including “Avocado Potato Salad” – find winning recipe on Taste of Home.
Step 3: Take Taste of Home recipe, change it around, make it your own!

My salad dressing included the following:
- 1 avocado
- tiny bit of fat free sour cream (*it was going to go bad before the challenge was over – I *HAD* to use it!
) - large spoonful of spicy mustard
- several spoonfuls of chopped garlic (I use the pre-minced jars)
- 4-6 stalks of green onions, chopped
- red wine vinegar
- salt, pepper, cayenne powder to your liking
I thought I’d died and gone to potato salad heaven after making this recipe – but it looks like I’ve one-up-ed myself!
TRY THIS – you will not be sorry!

That is one beautiful bowl of chili- what an awesome friend!! And I am all for any potato salad that doesn’t involve mayo. Deliciousness. My weekends usually involve more snacks than meals as well
