This is the awesome package I got from Chobani last month – they offered to send me yogurt because they know I have a serious addiction. Notice – it’s not a mix of flavors – just merely the two I’m absolutely bonkers over!

As I was going through my fridge over the weekend – I saw 2 of my Vanilla flavors were going to expire!
I knew I had to cave on the “no dairy” part of the challenge – and go with yogurt parfaits for breakfast.

I’ve never cooked barley before – but when I was brain storming dinner – I knew I had barley, and a butternut squash I wanted to cook.
Easy enough thanks to Yummly!
Have you guys ever used this site? You just go in, type in the ingredients you are looking to use (as well as any allergies or dietary restrictions) and it comes up with recipes that match. It’s. AWESOME.

I actually followed that recipe pretty closely (leaving out the parmesan cheese, and adding green onions) – and I was left with this beautiful plate:

Um. WOW! So I thought barley was some nasty, yucky-tasting grain. This stuff was HEAVENLY!

Thanks to the risotto-like-cooking method – it was creamy, even though there was no cream in the recipe! It’s SUPER filling too! LOVE! LOVE! LOVE!
Plus a few baked fries on the side always make me a happy gal!

Do you cook with barley? If so – what recipes do you normally make? Now that I’m not longer afraid of it – I’m dying to try some more recipes!

You know, I’ve been meaning to pick up some barley forever. My mom used to make a most bitchin beef barley stew!

owww – what a great freeby. Chobani rocks. ESPECIALLY the pineapple flavor. We can get enough around here. And you made yourself quite a beautiful little parfait with it. I have tons of leftover squash and was wondering what to do with it- now I know I will be making that risotto! I love barley- especially in soups/stews

I love using it in chili and just making grain salads with (cooking and adding whatever spices and veggies I have on hand).

i had barley for the first time a couple months ago. its delish! and so healthy for you. i made this and even matt ate it. he loved it! i didnt tell him until after he was finished that it was a weight watchers recipe

I am not sure if I’ve tried barley, but I tried bulgar wheat – not sure if its close to that, but I made it into a vegetarian chili that was really good!

God I’m jealous of that Chobani
I FINALLY found some pineapple… to.die.for. And the husband loves it too! Even if it isn’t included in the diet plan, greek yogurt is healthy and surely shouldn’t EVER be wasted.
