What a weekend! :)

Some of you might have seen this picture on Facebook, and for those of you who haven’t – I’m sharing it now…

The Food Show was way too much fun to rush through a recap post, and I did not have any free time over the weekend to devote to writing a proper post!  One is coming soon – PROMISE!

So I know we’ve talked about Eggs In A Whole before – but how about Eggs In A Pepper? :shock:

I wish I could take credit for this idea – but I’ve seen it all over the blog world, and just finally had the supplies to make it Sunday morning! :)

Mine were a little messy and overflowing:

Probably because I used the smaller pepper rings, and added half an onion to my egg mixture :razz:

But the 2nd time around (Mike’s breakfast) turned out pretty darn well, if I do say so myself! :cool:

Plus, it’s a great way to sneak vegetables into unsuspecting husbands! :wink:

For Sunday lunch – I was lucky enough to receive an invite to go out to eat with this lovely Mama (to film on of her Chevy Girl segments!)  The destination?

Treehuggers Cafe!

Now I’ve actually tried some pretty phenomenal baked goods from this place :mrgreen: (my friend Kelly got them for me during the Vegan Challenge, but I was too busy whining about the vegan challenge and never got the chance to talk about how awesome they were on here) but I’d never been there for a meal – so I was seriously looking forward to it! :)

We started off with the hummus platter, and it did not disappoint! :cool:

Tasty, fresh, delicious, and served with vegetables AND carbs. Life is good! :lol:

Their menu was HUGE, and so many of the options sounded amazing – so I struggled with what to order, but finally landed on the Manatee Grilled Eggplant Panini

Grilled Eggplant, Caramelized Onions, Buffalo Mozzarella, Fresh Tomatoes & Basil + pasta salad side dish (that varies day by day)

See that white-ish stuff?  It’s not cheese.  It’s eggplant.  And I don’t know why I thought I’d like this sandwich :roll: (I’m a recent convert to Eggplant Parmesan, but that’s about it. Otherwise, I don’t enjoy eggplant.)

The eggplant was TERRIBLE! :evil: BLECH!

I ate half the sandwich, salting every single bite in order to gag it down – before it dawned of me (UM – DUH, Allison) – why am I eating this?!?!  The second half I picked apart, and at the pesto, onions and tomatoes! :)

So while my opinion of the sandwich might not have been great – I do need to say – I’d go back in a heartbeat! :)   I really liked the restaurant itself, and everyone else was happy with their meals! :)  

Plus, they had these vegan pumpkin muffins in their bakery case that looked AMAZING! :wink:

2. I am *obsessed* with manatees, so I probably would have ordered that sandwich on principle alone… and I like eggplant a lot so it might have been a win/win. I am seriously getting a manatee tattooed on my calf as my next tattoo. My dream is to go to Florida and swim with the manatees. I’m gonna kiss one, lol. :)

I saw Heather’s post about the food show- SO freaking cool! And I love the idea of egg in a pepper. Totally makin these. The cafe looks awesome to me- so many veg options! Just a bummer that the eggplant was nasty. That picture of Heather is awesome

Hmm go to the store and get groceries after work or go to Treehuggers for dinner which is only 10 minutes away from me… SOLD! Thanks for the inside tip!

Im sad you didnt dig the eggplant. It has to be cooked right in order for it to be a star ingredient! Cant wait to hear about GUY!

Yep, saw the FoodTV thing on Heather’s blog already – so fricken cool though! I told her that if I lived anywhere near you guys I would have arm wrestled her for your extra ticket!

Ew – what were you thinking getting eggplant – that’s exactly what I thought when you said you ordered it – not a fan of it at all – not even covered in Parm!

Too bad about your meal at Treehuggers’ though…I hate when there’s a HUGE menu and somehow I manage to choose the one bad thing. Bummer!
